This is a modified version of a recipe given to me by a friend. I've subbed in all sorts of other fruits, and even veggies, for the blueberries, and they come out awesome every time.

1 cup milk
1 tablespoon white vinegar
1 cup all-purpose flour
1 cup whole wheat flour
¾ cup white sugar
1 tablespoon baking powder
½ teaspoon salt
2 eggs, lightly beaten
½ cup canola oil
2 cups frozen blueberries

Steps:

  • Combine milk and vinegar in a small bowl; allow to rest for 5 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease muffin cups or line with paper liners.
  • Mix all-purpose flour, whole wheat flour, sugar, baking powder, and salt in a large bowl; make a well in the center. Pour eggs, milk mixture, and canola oil into well; stir until batter is just combined. Fold in blueberries and pour batter into prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Cool in the pans for 10 minutes before removing to cool slightly on a wire rack.

Number Of Ingredients 16

TOPPING
1/4 c plus 1 tablespoon quick oats
3 Tbsp brown sugar
3/4 tsp cinammon
BATTER
1/4 c softened, butter
1 c sugar
2 eggs, lightly beaten
1 tsp vanilla extract
2 c flour
1/2 tsp baking powder
1 tsp baking soda
3/4 tsp cinnamon
1/2 tsp salt
1 1/3 c buttermilk
1 c blueberries - toss in flour

Steps:

  • 1. In a small bowl, mix oats, brown sugar and cinnamon. Set aside. Toss blueberries with flour. Preheat oven to 350 degree. Coat muffin tin with non stick cooking spray.
  • 2. In a large bowl, beat butter and sugar together until fluffy. Beat in the eggs. Mix flour, soda, baking powder, salt and cinnamon together. Beat in flour mixture alternating with buttermilk and end with flour.
  • 3. Carefully fold in the blueberries.
  • 4. Spoon 2/3 batter to each muffin cup. Sprinkle oat topping evenly to each.
  • 5. Bake for 15 - 20 minutes, or until pick comes out clean.
  • 6. Remove from oven and cool for 5 minutes in the pan, then remove and finish cooking on rack. Enjoy these yummy muffins.

Tips:

  • Use fresh or frozen blueberries. Fresh blueberries are ideal, but frozen blueberries work well too. If using frozen blueberries, thaw them before adding them to the batter.
  • Do not overmix the batter. Overmixing can result in tough muffins.
  • Fill the muffin cups only 2/3 full. This will prevent the muffins from overflowing.
  • Bake the muffins until a toothpick inserted into the center comes out clean. This usually takes about 20 minutes.
  • Let the muffins cool for a few minutes before serving. This will help them to hold their shape.
