4 ounces uncooked linguine
3 tablespoons butter
2 tablespoons olive oil
2 green onions, thinly sliced
2 garlic cloves, minced
2 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper
1/2 cup chopped seeded tomatoes
2 tablespoons lemon juice
1 tablespoon minced fresh parsley
Grated Parmesan cheese

Steps:

  • Cook linguine according to package directions. Meanwhile, heat a large skillet over medium heat. Add the butter and olive oil; cook the onion and garlic until tender. Sprinkle chicken with salt and pepper; add to skillet. Cook until a thermometer reaches 165°, 3-4 minutes on each side. Remove chicken and keep warm. , In the same skillet, combine the tomato, lemon juice and parsley; heat through. Drain linguine; toss with tomato mixture. I've seen chicken scampi recipes that use a cream-based sauce, and/or combine the chicken with veggies (like carrots, etc), and although I'm sure that it's quite tasty... it's not scampi. Scampi is an oil, wine, lemon-based...

PLAN/PURCHASE
1/2 lb chicken breast, boneless, skinless, cut into bite-sized pieces
THE MARINADE
3 Tbsp olive oil, extra virgin
3 Tbsp wine, dry white (pinot grigio, sauvignon blanc, chardonnay)
1 Tbsp lemon juice, freshly squeezed
1 pinch salt, kosher variety
1 pinch black pepper, freshly ground
THE SAUCE
2 Tbsp yellow onion, finely diced
1 clove garlic, minced
5 Tbsp sweet butter, unsalted
2 Tbsp olive oil, extra virgin
1 pinch crushed red pepper flakes
2 Tbsp wine, dry white
2 Tbsp lemon juice, freshly squeezed
1/8 tsp salt, kosher variety
1/8 tsp black pepper, freshly ground
1/4 c panko breadcrumbs

Steps:

  • 1. PREP/PREPARE
  • 2. THE MARINADE
  • 3. Gather and prep all your ingredients.
  • 4. Add all of the marinade ingredients to a bowl or Ziploc bag, and mix thoroughly.
  • 5. Add the chicken and then mix to coat.
  • 6. Place the chicken into the refrigerator, and allow it to marinate for two hours, but no longer than six.
  • 7. THE SAUCE
  • 8. Gather and prep all your ingredients.
  • 9. Add all of the sauce ingredients, except the panko breadcrumbs to a small saucepan, over medium heat.
  • 10. Allow to simmer for 5 minutes.
  • 11. Take off the heat and stir in the panko breadcrumbs.
  • 12. Place a rack in the middle position, and preheat the oven to 400f (205c).
  • 13. Remove the chicken from the marinade, and divide between two ovenproof dishes.
  • 14. Divide the sauce between the two dishes
  • 15. Place in the preheated oven, and bake for 30 minutes, or until the sauce is bubbling and the chicken begins to brown.
  • 16. PLATE/PRESENT
  • 17. Sprinkle a bit of Parmesan over the top, and serve with some fresh pasta. Enjoy.

1 1/4 cups seasoned bread crumbs
1/4 cup parsley flakes
1 teaspoon salt

Steps:

  • Preheat oven to 425 degrees.

1 pound thinly-sliced chicken cutlets, cut into 1/2-inch-thick strips
3 tablespoons olive oil
8 tablespoons unsalted butter, cubed
6 cloves garlic, sliced
1/2 teaspoon crushed red pepper flakes
1/2 cup dry white wine
12 ounces angel hair pasta
1 teaspoon lemon zest plus the juice of 1 large lemon
1/2 cup freshly grated Parmesan
1/2 cup chopped fresh Italian parsley

Steps:

  • Bring a large pot of salted water to a boil for the pasta. Sprinkle the chicken with some salt. Heat a large skillet over medium-high heat until hot, then add the oil. Working in 2 batches, brown the chicken until golden but not cooked through, 2 to 3 minutes per batch. Remove the chicken to a plate.
  • Melt 4 tablespoons of the butter in the skillet. Add the garlic and red pepper flakes and cook until the garlic just begins to turn golden at the edges, 30 seconds to 1 minute. Add the wine, bring to a simmer and cook until reduced by half, about 2 minutes. Remove from the heat.
  • Meanwhile, cook the pasta until very al dente, reserving 1 cup of the pasta water. Return the skillet to medium-low heat and gently stir the pasta until the butter is melted, adding the remaining 1/4 pasta water if the pasta seems too dry. 5 (4 ounce) skinless, boneless chicken breast halves - cut into 1 inch strips
¼ teaspoon ground black pepper
3 tablespoons grated Parmesan cheese
1 tablespoon dried parsley
1 clove garlic, minced
¼ teaspoon salt
1 teaspoon dried oregano
3 tablespoons lemon juice
3 tablespoons Worcestershire sauce
¼ cup white wine

Steps:

  • Combine chicken with ground pepper, cheese, parsley, garlic, salt, oregano, lemon juice, Worcestershire sauce and wine in a shallow bowl. Marinate in the refrigerator for several hours (overnight is best).
