Steps:

  • Prepare the Cake: Preheat oven to 325°F. Coat a 10-inch tube pan with cooking spray; dust with flour. Beat eggs, sugar, oil, and vanilla with a hand mixer on medium speed about 1 minute. Continue cooking, stirring constantly, until mixture reaches soft-ball stage (240˚F), about 3 minutes. Remove from heat; whisk until slightly thickened, abut 1 minute.

2 1/2-3 cups apples, peeled, cored, chopped
1 cup sugar
1 egg, beaten
1/2 cup unsalted butter, melted
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3/4 teaspoon cinnamon (or 1/2 teaspoon cinnamon and 1 teaspoon vanilla)
1/2 cup raisins
1/2 cup nuts, chopped (optional)

Steps:

  • Preheat over to 350 degrees F.
  • Sprinkle apples with sugar and let stand.
  • Mix beaten egg and butter.
  • Sift in flour, soda, salt and cinnamon and mix very well.
  • Fold into apples and make sure the apples are well and evenly coated.
