TOPPING:
3/4 cup all-purpose flour
3/4 cup packed brown sugar
3/4 cup old-fashioned oats
1/8 teaspoon salt
1/3 cup cold butter, cubed
FILLING:
1/2 cup sugar
1/2 cup 2% milk
2 large eggs, lightly beaten
1/4 cup butter
1 teaspoon vanilla extract
2 cups miniature marshmallows

Steps:

  • Preheat oven to 350°. Place sweet potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-12 minutes. Meanwhile, make topping by combining flour, brown sugar, oats and salt; cut in butter until crumbly. , Drain potatoes; return to pan. Beat until mashed. Add sugar, milk, eggs, butter and vanilla; mash. Transfer to a broiler-safe 13x9-in. baking dish. 2-3 c raw sweet potatoes, peeled and coarsely grated
2 large eggs
1 can(s) (12 oz) evaporated milk
4 Tbsp melted butter
1 tsp vanilla flavoring
1 c white or brown sugar
1/8 tsp cinnamon
1/8 tsp nutmeg

  • 1. Preheat oven to 350°. Cook grated sweet potatoes in boiling water 5 minutes; drain well.
  • 2. Combine sweet potatoes, eggs, milk, butter, vanilla, sugar, and spices in large mixing bowl. Beat together 1 minute. Pour into greased 2-quart casserole dish, or into 6 individual 1-cup ramekins.

2 tablespoons firmly packed brown sugar

Peanut or vegetable oil, for frying
3/4 cup cornstarch
3/4 cup seltzer water
1/2 cup Carolina mustard barbecue sauce

1/3 cup mayonnaise

1/2 STICK CONDENSED MILK
PRE HEAT OVEN TO 375 AND WASH SWEET POTATO AND PLACE IN LARGE POT
AND COVER WITH WATER. BOIL POTATO UNTIL TENDER ENOUGH TO MASHED.
PLACE POTATO IN A MIXER AND ADD SUGAR,LEMON FLAVOR, VANILLA FLAVOR, CINNAMON AND NUTMEG AND MIX WELL.
MAKE SURE THE POTATOES ARE COOL BEFORE ADDING EGGS BUTTER, MARGARINE ARE ADDED.
AFTER ADDING THEM MIX WELL IF A THINNER CONSITENCEY IS NEEDED ADD 1/2 CUP CONDENSED MILK.
BAKE 45 MINUTES REMOVE FROM OVEN AND BRUSH BUTTER OVER PIE. AND CONT TO COOK FOR ANOTHER 15 MINUTES.

6 -8 large white potatoes or 6 -8 large yukon gold potatoes
1 large sweet onion, diced to about 1/4 inch pieces (Walla Wallas are the best)
1/2 cup butter, one cube
2 cups cream or 2 cups half-and-half
1/2 teaspoon seasoning salt (or to taste)

Steps:

  • Boil potatoes WITH THE SKIN ON until barely fork tender, about 20 minutes.
  • Drain and cool.
  • While potatoes are cooling, saute onion in butter just until opaque. You don't want them browned. Set aside.

1/2 cup butter, softened (she used sweet cream butter)
1 1/2 cups buttermilk

1 pinch baking soda
