This simple, but delicious pancake is my version of one they make at Elmers Restaurant chain. They serve it with powdered sugar and lemon wedges. I like a little pure maple syrup on mine or possibly some sauted apples.

1/2 cup cold milk
1/2 cup flour
2 beaten eggs
1/8 cup melted butter
1/2 teaspoon vanilla
1 pinch salt
Pam cooking spray
sprinkling nutmeg

Steps:

  • Mix milk and flour; add beaten eggs, a pinch of salt, and vanilla.
  • Pour batter into sprayed or well buttered 9"x13" pyrex dish (or something comparable).
  • Sprinkle with nutmeg.
  • Bake in preheated 425 degree F oven for 15-20 minutes depending on altitude. (I have to bake mine for 20 minutes at 3500 ft.).
  • Serve with powdered sugar, lemon wedges, sauted apples, or of course, good ole pure maple syrup. Yum, yum and not too unhealthy.

1/8 teaspoon salt
1 cup all-purpose flour
1 1/2 cups milk
1 teaspoon sugar
1/4 lb butter, melted

Steps:

  • Preheat oven to 450 degrees Fahrenheit.

1/2 lb double­-smoked bacon, cut into 1/4 inch cubes
1 lb sauerkraut (canned is fine)
1 large apple, peeled and sliced
1 small onion, chopped
1/2 cup beef broth
2 tsp sugar
1/4 tsp pepper
2 1/2 lb potatoes, peeled and cubed
1 1/4 about 1 1/4 cups milk, hot
salt, nutmeg, pepper to taste
1 Tbsp butter
2 Tbsp grated cheese

Steps:

  • Butter a 2½ quart casserole dish. Preheat oven to 375°F. Sauté bacon until crispy in a large saucepan. Reserve 2 Tbsp fat. Pour off remaining fat and drain bacon on paper towels and set aside. Return reserved bacon fat to large saucepan, heat, and lightly cook onion until translucent. Add sauerkraut (with liquid), apple, broth, sugar, and pepper. Bring to boil and simmer until apples are tender, about 15 minutes. In the meantime, cook potato cubes in boiling water until tender, about 10 -­ 12 minutes. Drain. Mash potatoes with sufficient hot milk till proper "mashed­-potato" consistency. Season with salt, pepper, and nutmeg. Layer into casserole dish in the following order: potatoes, bacon, sauerkraut, potatoes, bacon, sauerkraut, and finally, potatoes. Dot the butter on top and sprinkle with the cheese. Bake for about 45 minutes, uncovered, until bubbly and lightly browned.

2 pounds Gouda cheese
4 eggs
4 cups curly noodles, cooked
1 cup sour cream
1 pound sausage, cut into chunks, (I use kielbasa)
1 teaspoon each salt and pepper
1 can sliced tomatoes

Steps:

  • Preheat oven to 350°F. Cut 6 or 7 slices of cheese. Cube remaining cheese. I In a 4-quart casserole layer, 1/2 noodles, all of the sausage, tomato, and cheese cubes. Layer remaining noodles and cheese slices on top. Combine eggs, sour cream, salt and pepper. Pour slowly over noodles, allowing it to seep between the ingredients. Cover and bake for 60 minutes or until cheese is golden brown.

1 Tbsp butter
1/4 c brown sugar
2 c apples, diced
2 egg yolks
1 1/2 Tbsp water
1/2 tsp baking powder
2 egg whites
1/2 c sugar
1/2 c flour
1/2 tsp vanilla
1/4 c nuts, chopped

  • 1. Butter casserole dish and sprinkle with brown sugar.
  • 2. Fill about 1/3 full with peeled chopped apples. Bake 350 degrees until partially soft.
  • 3. Beat egg yolks and sugar: then add water. Add sifted flour and baking powder. Add vanilla and nuts, mix.
  • 4. Fold in stiffly beaten egg whites.
  • 5. Pour over apples and bake about 30 minutes at 325. Serve hot.
