1/2 teaspoon salt
1/2 teaspoon pepper
2 cups shredded mozzarella cheese (8 oz)
4 oz cream cheese, softened

PROSCIUTTO WRAPPED ASPARAGUS BUNDLES

Prosciutto Wrapped Asparagus Bundles image

Tips:

  • Choose the right asparagus: Look for asparagus spears that are firm and have tightly closed tips. Avoid spears that are limp or have woody ends.
  • Trim the asparagus: Cut off the woody ends of the asparagus spears. You can also peel the asparagus spears if desired.
  • Blanch the asparagus: Blanching the asparagus will help to tenderize it and preserve its color. To blanch the asparagus, bring a large pot of salted water to a boil. Add the asparagus spears and cook for 2-3 minutes, or until they are tender-crisp. Remove the asparagus spears from the boiling water and immediately transfer them to a bowl of ice water to stop the cooking process.
  • Wrap the asparagus with prosciutto: Lay a slice of prosciutto flat on a work surface. Place an asparagus spear in the center of the prosciutto slice and wrap the prosciutto around the asparagus, starting from the bottom and working your way up. Secure the prosciutto with a toothpick.
  • Cook the asparagus bundles: Heat a large skillet over medium heat. Add the asparagus bundles and cook for 3-4 minutes per side, or until the prosciutto is browned and crispy.
  • Make the tomato dressing: While the asparagus bundles are cooking, make the tomato dressing. In a small bowl, whisk together the tomatoes, olive oil, vinegar, garlic, salt, and pepper. Taste the dressing and adjust the seasonings as desired.

Conclusion:

Asparagus prosciutto bundles with tomato dressing is a delicious and easy-to-make appetizer or side dish. The asparagus is tender and flavorful, the prosciutto is crispy and salty, and the tomato dressing is light and tangy. This dish is sure to impress your guests!
