1 small shallot or 1/2 large shallot, finely chopped
1/3 cup extra-virgin olive oil, eyeball it
1 pound asparagus, thin spears
2 endive, cored and thinly sliced
1/2 small red bell pepper, chopped
1/2 pound bow tie pasta, farfalle, cooked to al dente and cooled
1/2 cup frozen green peas
1/4 cup chopped fla- leaf parsley, a couple of handfuls
3 tablespoons white wine vinegar
Salt and freshly ground black pepper

Steps:

  • Heat shallot and oil in microwave safe covered dish for 30 seconds or in a small pan on the stovetop over medium low heat for 5 minutes. Allow oil to cool back to room temperature.
  • Hold a spear of asparagus at each end and snap it. The spear breaks where the tender tops meet the tough bottoms. Line the broken spear up with the bundle of cleaned asparagus. Cut the spears using the guideline of the snapped spear. Par boil the asparagus tops in 1 inch simmering water covered for 3 to 5 minutes. Cool under cold running water and drain. Cut asparagus into 1-inch pieces on an angle and add to a bowl. Combine chopped, cooked asparagus with shredded endive, red bell pepper, cooked pasta, green peas and chopped parsley. The peas will defrost as you toss salad. Pour vinegar into a small bowl and whisk in cooled shallot oil. Pour dressing over salad and toss. Season salad with salt and pepper, to your taste and toss again.

1 pound pasta, (cooked)
kosher salt and pepper
1 pound asparagus, (woody stems removed and cut into thirds)
1 pint cherry tomatoes, (quartered)
4 green onions, (thinly sliced)
8 ounces white cheddar or fontina cheese, (cubed)
¼ cup chopped fresh herbs, (like basil and parsley)
¼ cup apple cider vinegar
2 tablespoons honey
2 tablespoons dijon mustard
2 garlic cloves, (finely minced or pressed)
kosher salt and pepper
1/2 cup extra virgin olive oil

Steps:

  • Bring a pot of salted water to a boil and cook the pasta according to the directions.
  • Heat the olive oil in a skillet over medium heat. Add the asparagus with a pinch of salt and pepper. Cook, tossing often, until the asparagus is bright green in color and slightly softened (like as if you would eat it straight from the pan!), then turn off the heat.
  • In a large bowl, combine the cooked pasta, the asparagus, tomatoes, green onions and cheddar cheese. Pour in the dressing and toss well to combine. Taste the pasta salad and add another pinch of salt and pepper if you find that it needs it (this will depend on how much you use for the boiling pasta, dressing and asparagus!). Stir in the fresh herbs.
  • You can store this in the fridge now until serving, or you can serve it immediately. It will last in the fridge for 2 to 3 days. If you are making it a day or so ahead of time, I suggest tossing in the fresh herbs right before serving.

1 teaspoon sugar

1/2 teaspoon crushed red pepper flakes, or more to taste (optional)
1/2 cup extra-virgin olive oil
Kosher salt
2 1/2 cups dried short pasta, such as penne or rotini
1 pound asparagus, tough stems removed, spears cut into 1-inch lengths
2/3 cup sliced red onions
1 1/2 cups diced tomatoes
2/3 cup grated Parmesan, for serving

  • For the dressing: Whisk together all of the ingredients in a medium bowl until combined. Set aside.

1 lb fresh asparagus, cut into 2-inch pieces, tops separated from stems
1 (16 ounce) package tri-colored pasta, cooked & drained
1 medium sweet potato, peeled, cooked, diced

1 1/2 cups Kraft light zesty italian dressing

2 lbs asparagus
2 tablespoons lemon juice
3 garlic cloves
1/4 cup pine nuts (lightly toasted)
1 cup lightly packed fresh basil leaf
1/2 teaspoon salt
1 lb penne or 1 lb other pastas
salt and pepper
nutritional yeast

Steps:

  • Snap off the tough ends of the asparagus. Bring a large pot of water to a boil, and add the asparagus spears.
  • Cook until just tender, about 4 minutes.
  • Without emptying the water from the pot, lift out the asparagus spears and set aside to cool slightly.
  • Bring the water back to a boil.
  • Add salt, if needed, and add pasta.
  • Cook until the pasta is al dente.
  • Reserve 1 cup of pasta cooking water, and drain and rinse the pasta with cool water.
  • Put into a serving bowl.
  • Trim off the top 3 or 4 inches of the asparagus spears, and put the tips into the bowl with the pasta.
  • Cut the bottoms into several pieces, and set aside to use in the pesto sauce.
  • Use a food processor to make the pesto: With the processor running, drop in the garlic cloves and allow them to chop. Add 2 tablespoons of the pine nuts, and pulse to chop. Add the lemon juice, basil, salt, and the asparagus pieces (not the tips!) along with 4-6 tablespoons of the reserved pasta water. (Start with 4 tablespoons water and add more as needed.) Puree until smooth.
  • Toss the pasta and asparagus tips with the pesto, and season with salt and pepper to taste.
  • Sprinkle with the remaining pine nuts or nutritional yeast, and serve warm or refrigerate until ready to serve.

1 pound asparagus
1/2 pound mushrooms, thinly sliced
1/4 cup chopped fresh herbs, such as parsley, tarragon and chives
1 cup baby arugula

1 small garlic clove, minced or pureed
5 tablespoons extra virgin olive oil
