1 Tbsp spring onion or green onion, white part only, finely chopped
1/2 lb asparagus, trimmed and cut into 1/2-in/12-mm pieces
4 large eggs
1/3 cup heavy cream
1 tsp salt
1/4 tsp Tabasco sauce
1/2 cup crumbled goat cheese

Steps:

  • Set a medium rice cooker to the regular cycle or to quick cook if it's a fuzzy-logic machine. Heat the olive oil and sauté the spring onion for 1 minute. Add the asparagus and cook for another 3 minutes, or until the asparagus begins to soften. In a medium mixing bowl, whisk together the eggs, cream, salt, and Tabasco. 1 cup cut-up cooked asparagus (in 1- to 2-inch pieces)
1 cup cherry tomatoes
8 large eggs, beaten with kosher salt and freshly ground black pepper
2 ounces goat cheese, crumbled
2 tablespoons mix of chopped fresh chives and dill

Steps:

  • Preheat the broiler.
  • Warm the oil in a medium (10-inch) nonstick ovenproof skillet over medium heat. Add the asparagus and cherry tomatoes and saute until warmed through. Add the eggs, stir and let cook until firm around the edges. With a spatula, lift the edges and tilt the pan to allow the uncooked portion of the egg to run into the bare pan beneath the spatula. 2 red onions , thinly sliced
200g chopped curly kale
2 tbsp balsamic vinegar
8 large eggs , lightly beaten with a little seasoning
100g firm goat's cheese , broken into chunks

  • Heat oven to 190C/170C fan/gas 5. Heat the oil in a 25cm ovenproof frying pan. Add the onions and cook for 10-15 mins until soft and caramelised. 2 medium russet potatoes (1 pound), peeled and cut into 3/4-inch cubes
