Tips:

  • Choose fresh, tender asparagus. Look for spears that are bright green and have tight, closed tips.
  • Trim the asparagus spears. Cut off the tough ends of the asparagus spears, about 1 inch from the bottom.
  • Blanch the asparagus spears. This helps to tenderize the asparagus and bring out its natural flavor. To blanch the asparagus, bring a large pot of salted water to a boil. Add the asparagus spears and cook for 2-3 minutes, or until the asparagus is bright green and tender.
  • Prepare the fish fillets. Rinse the fish fillets and pat them dry with paper towels. Season the fish fillets with salt, pepper, and any other desired seasonings.
  • Wrap the fish fillets in the prosciutto. Lay a slice of prosciutto flat on a cutting board. Place a fish fillet on top of the prosciutto and wrap the prosciutto around the fish fillet. Secure the prosciutto with a toothpick.
  • Wrap the fish bundles in the asparagus spears. Place an asparagus spear on a cutting board. Place a fish bundle on top of the asparagus spear and wrap the asparagus spear around the fish bundle. Secure the asparagus spear with a toothpick.
