A wonderful appetizer to have on hand that can be made ahead of time, frozen, and used as needed.

20 thin slices sandwich bread, crusts removed
¾ pound butter
4 ounces blue cheese, at room temperature
1 (8 ounce) package cream cheese, at room temperature
1 egg, beaten
20 fresh asparagus spears

Steps:

  • Trim crusts from bread, and flatten slightly with a rolling pin.
  • In a bowl, stir blue and cream cheeses together with the egg until well blended and creamy. Spread a thin layer of cheese mixture over each slice of bread. Roll one asparagus spear inside each, and fasten with a toothpick.
  • Melt butter in a small saucepan. Roll each asparagus wrap in butter to coat. Place on a baking sheet small enough to fit into the freezer, and freeze for one hour, or until butter hardens and wraps are somewhat firm. Remove pan from freezer, discard toothpicks, and cut each wrap in half crosswise. Store in a resealable plastic bag in the freezer until ready to use.
  • To serve, preheat oven to 400 degrees F (205 degrees C).
  • Arrange frozen asparagus wraps on an ungreased baking sheet. Bake in the preheated oven for 25 minutes, or until lightly browned. Check occasionally, and turn if necessary, for even browning and to prevent burning. Enjoy!

2 can(s) asparagus spears (15 oz each)
1 1/2 loaves white bread, crusts trimmed
3 oz blue cheese crumbles
1 pkg cream cheese (8 oz)
1 egg, slightly beaten
1 stick melted butter or margarine
1 can(s) Parmesan cheese, grated (1 1/2 - 2 cups)

Steps:

  • 1. Flatten bread slices with a rolling pin.
  • 2. Mix together blue cheese, cream cheese, and the egg.
  • 3. Spread bread with cheese mixture.
  • 4. Roll asparagus spears in bread slices and place on wax paper.
  • 5. Freeze on wax paper until firm (about 30 minutes).
  • 6. When firm, cut each roll in half.
  • 7. Roll in butter.
  • 8. Then roll in Parmesan cheese.

15 asparagus spears
1/2 lb imported prosciutto, sliced thick enough so it holds together when laid out
1/2 cup boursin cheese (available in dairy section or see below)

Steps:

  • Snap bottoms off of asparagus, use a vegetable peeler to peel spears and steam them to a point where they are not totally wilted. Refrigerate until needed.
  • Lay out pieces of prosciutto and spread about one tablespoon of Boursin cheese onto each slice. Mean Chef has a recipe if you find it hard to locate in your local market -- Boursin Cheese - Make your own Recipe #65204.
  • Put chilled asparagus spears on kitchen towels to absorb any moisture. Place one or two asparagus spears in each slice of prosciutto and roll. Refrigerate if not serving immediately.

3 oz blue cheese
8 oz cream cheese, at room temperature
1 large egg, lightly beaten
20 slice of white bread or 10 white and 10 wheat
15 oz can of asparagus,drained well,pat dry
1 c butter, melted
Note: crispy bacon or shaved ham may be added to the cheese mixture ,if desired.

Steps:

  • 1. Blend blue cheese, cream cheese and egg until very smooth. Trim crust from bread(must do).Flatten each slice of crust-less bread with a rolling pin, then spread each piece with the cheese mixture.
  • 2. Place one asparagus spear on the bottom of each slice of bread(cut to fit on bread and add together on bread) and roll up. Place the rolls on a freezer safe pan or plate(not touching each other)- then place in the freezer to firm up; so as to cut easier. This will also prevent cheese mixture from gushing out while slicing and baking.
  • 3. Heat oven to 400^. Remove rolls from the freezer, cut each roll in half or thirds.(these can be made ahead, frozen and placed in freezer bags for future use). When ready to bake, place the rolls on a baking sheet and brush very generously with the melted butter. Bake for 20-25 minutes until lightly browned and crunchy.Serve at once.

1 large lemon, zested
8 slice bacon, cooked and crumbled
20 slice pepperidge farm thin white bread
20 stalks of asparagus, ends snapped off
1 stick butter, melted
parmesan cheese for sprinkling

  • 1. Mix together: cream cheese, lemon zest and bacon.
  • 2. Cut crusts from 20 slices of Pepperidge Farm bread; roll flat.
  • 3. Spread cheese mixture on bread. Lay stalk of asparagus on each and roll up. Secure with toothpick if necessary.
  • 4. Brush top with melted butter and sprinkle with parmesan cheese. Put in freezer until frozen.
