SPRING ASPARAGUS TART

Yield 6 to 8 servings

Steps:
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Lightly flour the work surface and roll out the puff pastry to a 9- by 12-inch even rectangle. Transfer to the prepared baking sheet. Combine the mascarpone, 1 1/4 teaspoons of the salt, the flour, egg and lemon zest, and then fold in the chives and tarragon. Spread over the puff pastry, leaving a 3/4-inch border. Make small cuts around the border about 1 inch apart with the tip of a paring knife.
- Toss the asparagus with the olive oil in a bowl. Lay half of the asparagus in a neat row across the surface of the tart so the tips meet the edge. Do the same in the opposite direction with the remaining asparagus. Season with the remaining 1/4 teaspoon salt and some pepper. Bake until the border of the tart is deep golden and puffed and the top is lightly spotted golden brown, about 25 minutes. Let cool for 5 to 10 minutes and serve.
- Serve with lightly dressed greens.

Steps:
- First preheat your oven to 400°F.
- Take out your large cutting board and dust with flour lightly.
- Gently roll the sheet of puff pastry into a rectangle 16x10 inches.
- Trim the edges if they are crooked.
- With a knife, score (gently) 1 inch in from the edges to mark a rectangle.
- Use a fork and pierce the dough inside the markings at 1/2-inch intervals.
- Randomly scatter some baking beans so the dough doesn't poof up badly (you know, the kind you use when blind baking pie dough!).
- Bake 12 minutes.
- Leave your oven on, but remove pastry from the oven.
- Layer the slices of brie over the top (leave a small edge).
- Cut your asparagus to the width of the pastry and arrange in a single layer over your brie slices (you could make it pretty or whatever by putting top to bottom top to bottom alternating ends that are on each side).
- Brush top with the seasoned olive oil, sprinkle with salt and pepper and bake 25 minutes.
- Serve!

Steps:
- Preheat oven to 350 degrees F.
- Make sure phyllo is completely defrosted. Once removed from package, you will need to cover phyllo with waxed paper and a damp towel to prevent it from drying out. Lay out sheet of dough, lightly butter with pastry brush. Fold sheet in half, butter again. Keep re-buttering and folding in half (probably 3 "folds" total) until you have a rectangle with dimensions close to 4 by 4 inches. Cut into 3 sections. Sprinkle Parmesan on each piece of dough. Crumble a bit of brie on each. Lay asparagus tip on top and roll dough around asparagus. The tip of the asparagus should show out of the end. Repeat to make 16 pieces. Lay all pieces out on a cookie sheet. Brush each piece with butter and bake in oven until golden brown. Serve warm.

Steps:
- Pre-heat oven to 200°C or 400°F.
- Use pastry to line a 9 inch round flan tin or dish.
- Melt butter and lightly fry the spring onions.
- Meanwhile, cut the rind from the cheese and chop into small cubes.
- Throw cheese, eggs, cream and milk into a food processor (or use a hand mixer in a bowl) and blend until smooth.
- Add nutmeg, salt and pepper.
- Scatter onions on base of pastry, pour in cheese mixture and place asparagus spears in a spoke pattern on top.
- Bake for 25-30 minutes until set and lightly browned.
Tips:
- Choose Fresh Ingredients: Use fresh, crisp asparagus and ripe, creamy brie cheese for the best results.
- Prepare the Pastry Dough: You can use store-bought puff pastry or shortcrust pastry, or make your own using the provided recipe. If using store-bought dough, let it thaw according to the package instructions.
- Trim the Asparagus: Trim the tough ends of the asparagus stalks and cut them into 2-3 inch pieces.
- Blanch the Asparagus: Blanching the asparagus helps preserve its vibrant color and crisp texture. Bring a large pot of salted water to a boil, add the asparagus, and cook for 2-3 minutes, or until tender-crisp. Immediately transfer the asparagus to a bowl of ice water to stop the cooking process.
- Assemble the Tarts: Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the pastry dough to a 12-inch (30 cm) circle. Transfer the dough to a greased baking sheet. Arrange the asparagus and brie slices on the pastry, leaving a 1-inch (2.5 cm) border around the edge.
- Bake the Tarts: Brush the edges of the pastry with an egg wash and bake the tarts for 20-25 minutes, or until the pastry is golden brown and the brie is melted and bubbly.
- Serve the Tarts: Let the tarts cool slightly before slicing and serving. Garnish with fresh herbs, such as chives or parsley, if desired.
