Provided by Anne Burrell

Categories     main-dish

Time 2h40m

Yield 6 to 8 servings

Number Of Ingredients 9

3/4 cup soy sauce
1/2 cup rice wine vinegar
1 tablespoon hot chili sauce (recommended: sambal oelek)
1 (1-inch) piece ginger, finely chopped
3 garlic cloves, smashed and finely chopped
1 scallion, both green and white parts, thinly sliced
1 orange, zested
4 pork tenderloins
2 tablespoons coriander seeds, toasted and ground

Steps:

  • In a medium bowl, combine the soy, rice wine vinegar, chili sauce, ginger, garlic, scallions and orange zest. Place the pork in a large container or bowl and pour the marinade over the pork. Cover with plastic wrap, and let sit for 2 hours at room temperature, or overnight in the refrigerator.
  • Remove the pork from the container, put the marinade in a small saucepan and bring it to a boil over medium heat. Remove from the heat and reserve it for drizzling over the pork when serving. *WARNING: This liquid MUST be brought to a boil to kill any bacteria from raw meat juices.

  • Remove the pork from the grill to a cutting board and let rest for 10 minutes before slicing. Slice the pork on the bias and place on a serving platter. Serve drizzled with the reserved boiled soy marinade.
  • Pork- the other white meat!

Categories     World Cuisine Recipes     Asian

Time 55m

Yield 8

Number Of Ingredients 17

2 teaspoons smoked paprika
1 teaspoon kosher salt
¼ teaspoon ground ginger
¼ teaspoon white pepper
2 (1 pound) pork tenderloins, silver skins removed
1 ¾ cups chicken broth
3 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon avocado oil
½ cup no-sugar-added apricot preserves
2 teaspoons sambal oelek, or to taste
2 teaspoons grated fresh ginger
1 clove garlic, minced
1 teaspoon sesame oil
1 tablespoon cornstarch
1 teaspoon sesame seeds
1 tablespoon chopped fresh cilantro

Steps:

  • Turn on an 8-quart multi-functional pressure cooker (such as Instant Pot®), select Saute function, and allow to preheat.
  • Combine paprika, salt, ground ginger, and white pepper in a small bowl. Rub tenderloins on all sides with the mixture.
  • Combine chicken broth, soy sauce, and rice vinegar in a separate bowl; you should have 2 cups, the recommended amount of cooking liquid in an 8-quart pot. Check your owner's manual for recommended liquid amount for other sizes and adjust accordingly.
  • Pour avocado oil into the Instant Pot® and heat until shimmering. Add tenderloins to brown, about 2 minutes per side. Remove tenderloins to a plate, add liquid mixture to the pot, and scrape the browned bits from the bottom of the pot, stirring all together. Turn off Saute function.
  • Place a rack or trivet into the Instant Pot® and place tenderloins on the rack. Close and lock the lid and set vent to Sealing. Select high pressure according to manufacturer's instructions; set timer for 1 minute. Allow 10 to 15 minutes for pressure to build.
  • Let pork cook until internal temperature reaches 135 to 140 degrees F (57 to 60 degrees C). Place tenderloins on a cutting board and cover with foil to rest while you make the glaze. Internal temperature should rise to 145 degrees F (63 degrees C). Remove about 3 tablespoons of cooking liquid and set aside.
  • Select Saute function and bring remaining cooking liquid in the pot to a boil. Allow to reduce to about 1 cup, 3 to 10 minutes, depending on how much liquid was used for the size of the pot. Add preserves, sambal oelek, grated ginger, garlic, and sesame oil; cook for about 2 minutes.
  • Create a slurry of the reserved 3 tablespoons cooking liquid and cornstarch in a small bowl. Continue cooking on the Saute function and add the slurry, stirring constantly until the liquid comes to a boil and thickens slightly. Pour glaze carefully into a container.
  • Slice the pork, drizzle with glaze, sprinkle with sesame seeds, and garnish with cilantro. Serve warm with additional glaze for dipping, if desired.

Tacos Al Pastor also requires overnight marinating, so this dish can be made the day the ingredients are purchase, while Tacos Al Pastor marinates for the second night. In addition to being spread on pancakes for mu shu pork, it is used for delicious stir-fry barbecue sauces like this one." She also offers this tip: "Hoisin is made from soybeans, chilies, garlic, ginger, and sugar. Brands vary quite a bit from one to another. It should be very dark and have a complex flavor. ASIAN OVEN-ROASTED "RED" PORK TENDERLOIN

Asian Oven-Roasted

This is the about the third Asian-inspired pork dish that I've posted... One thing about the Asians, they do love their pork (and so do I). This one is easy peasy... all you have to do is have patience. This particular pork has more subtle flavors, and is excellent served as an appetizer, as a main dish served with noodles,...

Time 1h

Number Of Ingredients 11

2 lb pork tenderloin, well trimmed
THE MARINADE
1/2 c chicken stock, not broth
1/4 c brown sugar, well packed
2 tsp salt, kosher variety
1/2 tsp chinese five-spice powder
2 Tbsp tamari
1 Tbsp sake (or sherry)
1 Tbsp red miso paste
2 tsp fresh garlic, minced
1 Tbsp fresh ginger, minced

Steps:

  • 1. Gather your ingredients.
  • 2. Trim any excess fat from the pork loin.
  • 3. Place the pork tenderloin in a large Ziploc bag.
  • 4. Chef's Tip: You could always use non-reactive bowl.
  • 5. Stir all of the marinade ingredients together in a small bowl, making sure that the sugars have completely dissolved.
  • 6. Chef's Tip: If you want that distinctive red color to the pork, add a drop or two of red food coloring. The inclusion of omission of this item in no way impacts the taste of the pork. Only its appearance... We eat first with our eyes.
  • 7. Pour the marinade over the pork, and make sure it is completely coated.
  • 8. Squeeze all the air out of the Ziploc bag, or cover the bowl.
  • 9. Place in the refrigerator for 6 to 24 hours.
  • 10. Chef's Note: Allow the marinade and the pork to get to know each other for 6 to 24 hours. I've found if I allow the pork to marinate over 24 hours, it begins to overpower the pork.
  • 11. Chef's Tip: Every once in awhile while you're exploring what's in the fridge, give the pork a turn in the bowl, or give the Ziploc bag a squeeze.
  • 12. Remove the pork from the refrigerator, and discard the excess marinade.
  • 13. Optional: If you want the tenderloin to be more round than oval. Then use some twine to truss up the pork. Use a surgeon's knot to pull it nice and tight.
  • 14. Place the pork loin on a baking sheet, fitted with a wire rack.
  • 15. Allow it to rest, for 30 minutes.
  • 16. While the pork is resting, place a rack in the middle position, and preheat the oven to 375f (190c).
  • 17. If you have an external temperature probe, insert that into the middle of the tenderloin.
  • 18. Place in the oven, and keep an eye on the internal temperature of the pork.
  • 19. SELFIE: Waiting for the pork to come out of the oven.
  • 20. Remove from the oven when the internal temperature of the pork reaches 160f (71c), about 1 hour.
  • 21. Allow the pork to rest for 20 minutes before slicing.
  • 22. Chef's Note: While the roast is resting, the internal temperature of the roast will rise to 165f (74c). This is called carry-over cooking.
  • 23. Chef's Note: Most people overcook items in the oven, because they don't take into account "carry-over" cooking. Pork loin is a very lean cut of meat. Once it hits 165f (74c), it will begin drying out quickly. By taking it out of the oven at 160f (71c), the carry over cooking will take it up to safe temperatures, and you'll have a perfectly juicy tenderloin.
  • 24. If you're serving this as a main dish, cut it into 1/4 inch (35cm) slices, then toss some Chinese noodles with 1teaspoon each of tamari, and sesame oil. Add the pork and the noodles to a plate and sprinkle with some toasted sesame seeds.
  • 25. Serving Suggestion: Or, you could slice the pork and place into a nice steaming bowl of noodles and Asian broth (my personal favorite).
  • 26. Keep the faith, and keep cooking.

ASIAN PORK TENDERLOIN

Asian Pork Tenderloin image

I love Asian flavors and have been making Asian dishes at home at least once a week for a few years. Once I got over my fear of trying to cook Asian food that is and realized just how simple it really was. Most of the dishes I cook are beef dishes that I have substituted with chicken since I try not to cook with red meat as much...

Time 1h

Number Of Ingredients 12

2 pork tenderloins (or 3lb loin or shoulder roast)
8 clove garlic (minced)
1 Tbsp ginger (minced)
6 Tbsp cooking sherry (dry)
1 c hoisin sauce
1 c plum sauce
1 c soy sauce
1 c honey
1/4 c sugar
1 Tbsp sesame oil
1 Tbsp red pepper flakes (optional)
2 bunch green onions (thinly sliced with greens)

Steps:

  • 1. Preheat oven on 375. Trim (remove silverskin)and season tenderloins with salt and pepper. Brown on all sides in olive oil. Set aside.
  • 2. Heat pan back up and add a bit more olive oil and sear minced garlic and ginger for about 1 minute. Add hoisin, plum sauce, soy sauce, honey, sherry, sesame oil, sugar and red pepper flakes if you like it a bit spicy. Let simmer for at least five minutes. Turn off and stir in onions.
  • 3. Place tenderloins in baking dish and pour the sauce over them. Cook in preheated oven for 30-35 minutes. Let stand a bit before slicing. If using a roast which will require more baking time bake for a bit and pour sauce in when 30 mins of cooking time left as not to burn the sauce.

Tips:

  • For the best results, use a meat thermometer to ensure the pork tenderloin is cooked to an internal temperature of 145°F (63°C).
  • If you don't have a meat thermometer, cook the pork tenderloin for 20-25 minutes per pound, or until the juices run clear.
  • To make a thicker sauce, add a cornstarch slurry (equal parts cornstarch and water) to the simmering sauce and cook until thickened.
  • Serve the pork tenderloin with your favorite sides, such as rice, noodles, or vegetables.
  • For a more flavorful dish, marinate the pork tenderloin in the Asian marinade for at least 30 minutes before cooking.
  • You can also grill or roast the pork tenderloin instead of pan-frying it.

Conclusion:

Asian pork tenderloin is a delicious and versatile dish that can be served with a variety of sides. It's a great option for a quick and easy weeknight meal or for a special occasion. With its tender meat and flavorful sauce, Asian pork tenderloin is sure to please everyone at the table.
