2 medium carrots, cut into 1/4-inch diagonal slices
1 cup coarsely chopped bok choy
1 tablespoon sesame oil
1 tablespoon minced fresh gingerroot
3-1/2 cups reduced-sodium chicken broth
1 cup water
1 tablespoon reduced-sodium soy sauce
1/4 teaspoon coarsely ground pepper
3/4 cup cubed cooked pork tenderloin
3 green onions, thinly sliced diagonally

32 oz chicken broth
2 c water
1/2 c hoisin sauce
2 Tbsp each fresh ginger grated, soy sauce, honey and rice vinegar
3 clove garlic minced
1 lb pork tenderloin
2 bunch baby bok choy sliced
1 c shiitake mushrooms sliced
8 oz rice noodles
fresh cilantro leaves for garnish

Steps:

  • 1. place the chicken broth, water, hoisin sauce, ginger, soy sauce, rice vinegar, honey, and garlic in a crock pot. Mix well. Add the pork tenderloin and cook on low for 6 hours
  • 2. Remove the pork from the broth and set aside. Add the mushrooms, bok choy and rice noodles. Make sure the noodles are completely submerged in the broth. Cook another 30 minutes.
