2 Tbsp sesame oil
1/2 medium white or yellow onion (diced)
1 lb. boneless skinless chicken breast (sliced into small pieces, about 1/2")
1 Tbsp garlic paste (or finely minced garlic)
1 tsp ginger paste (or finely minced fresh ginger)
1 Tbsp light brown sugar
1/3 cup reduced sodium soy sauce
1 Tbsp tomato paste
1 1/2 tsp rice vinegar
2 Tbsp sriracha sauce (use more or less, according to your tastes)
1 Tbsp hoisin sauce
2 tsp sambal oelek red chili paste (use more or less, according to your tastes)
1/2 cup reduced sodium chicken broth
1 tsp cornstarch
1/2 cup peanuts (roughly chopped)
8-10 pieces Boston bibb lettuce
sesame seeds
chopped green onions

Steps:

  • Heat the sesame oil in a large skillet over MED heat and add the onion. Cook until the onion becomes translucent, about 4-5 minutes.
  • Add the chicken breast pieces and cook for about 5 minutes.
  • Mix the garlic and ginger paste, brown sugar, soy sauce, tomato paste, rice vinegar, sriracha, hoisin sauce and chili paste together in a small mixing bowl.
  • In another small bowl, whisk together the chicken broth and cornstarch until smooth.
  • Once the chicken has cooked, pour the sauce over the chicken and stir. Let it cook for about 2 minutes, then add the chicken broth/cornstarch mixture and stir.
  • Reduce the heat to MED LOW and let the sauce simmer for 5-8 minutes, or until thickened to your liking.
  • Stir in the peanuts, then remove the skillet from the heat and let it cool for 5-10 minutes. Keep in mind the sauce will continue to thicken as it cools.
  • Lay the lettuce on a plate, add some filing to the middle, then garnish with sesame seeds and chopped green onions and serve.

Time 2h30m

Number Of Ingredients 14

1/2 cup hoisin sauce
1/4 cup reduced-sodium soy sauce (plus 1 tablespoon, use tamari to make gluten free)
2 tablespoons rice vinegar
2 teaspoons sesame oil
1 tablespoon extra-virgin olive oil
2 pounds ground chicken breast
1 small bunch green onions (thinly sliced, white/light green and dark green parts divided)
1 tablespoon freshly grated ginger
2 cloves garlic (minced (about 2 teaspoons))
8 ounces baby bella cremini mushrooms (finely chopped)
1 1/2 cup grated carrots (from about 3 large carrots)
1/2 teaspoon red pepper flakes (reduce to 1/4 teaspoon or omit if sensitive to spice)
2 cans water chestnuts, drained and finely chopped ((8 ounce cans) drained and finely chopped)
2 heads butter lettuce

Steps:

  • Lightly coat a 5-quart or larger slow cooker with nonstick spray. In a small bowl, stir together the hoisin, soy sauce, rice vinegar, and sesame oil. Set aside.
  • Heat the olive oil in a large skillet over medium high. Add the chicken and brown the meat, breaking it into small pieces. Continue cooking until no longer pink, about 4 to 6 minutes. Stir in the white and light green parts of the green onions, ginger, and garlic. Cook 30 additional seconds.
  • Transfer the meat mixture to the slow cooker. Stir in the chopped mushrooms, carrots, red pepper flakes, and sauce. Cover and cook on LOW for 2 to 3 hours until the mixture is thickened and the chicken is ultra tender. (Do not be tempted to cook on HIGH, as the chicken will become tough.) Stir in the water chestnuts and green parts of the green onions.
  • To serve, separate the butter lettuce leaves and fill with the chicken mixture. Enjoy hot.

Tips:

  • Choose the right lettuce. Boston or butter lettuce works best for these wraps because they have large, sturdy leaves that can hold up to the filling ingredients.
  • Prepare the chicken ahead of time. You can cook the chicken up to 3 days in advance and store it in the refrigerator. This will save you time when you're ready to assemble the wraps.
  • Use a variety of vegetables. The more colorful and flavorful the vegetables, the better the wraps will be. Some good options include carrots, cucumbers, bell peppers, and radishes.
  • Don't overstuff the wraps. You want the wraps to be easy to eat, so don't pack them too full. Otherwise, they'll be difficult to roll up and eat.
  • Serve the wraps with dipping sauce. A simple soy sauce-based dipping sauce is a great way to add extra flavor to the wraps.

Conclusion:

Asian chicken and rice lettuce wraps are a healthy, flavorful, and easy-to-make meal that can be enjoyed by people of all ages. They're perfect for a light lunch or dinner, and they're also great for parties and potlucks. With a little planning, you can have these wraps on the table in no time.
