SPICY ASIAN GROUND TURKEY WITH CABBAGE

Spicy Asian Ground Turkey With Cabbage image

I've jotted down the basic recipe to a meal we enjoy. I usually adjust it to taste as I cook. I eat this in lettuce cups but I also serve it over brown rice or with noodles. I adapted the dipping sauce from another recipe because it like so much.

Provided by jrusk

Categories     One Dish Meal

Time 20m

Yield 4 serving(s)

Number Of Ingredients 16

4 scallions, coarsely chopped (green and white parts)
fresh ginger (2-inch piece peeled and grated or finely chopped)
1 cup green cabbage (thinly sliced)
1 jalapeno pepper, finely chopped and halved
2 garlic cloves, minced
2 tablespoons hoisin sauce
1 -2 teaspoon hot chili sauce
3 tablespoons low sodium soy sauce
1 tablespoon low sodium soy sauce
1/3 cup low sodium soy sauce
3 -4 tablespoons cilantro leaves
2 limes (zest and juice of 2 limes)
1 lb ground turkey
1 tablespoon vegetable oil
1 teaspoon dark sesame oil
1 tablespoon honey

Steps:

  • Heat 1 tablespoon vegetable oil in a wok or large pan. When hot add ground turkey and stir fry it for 5 minutes. Add Hoisin sauce, hot chili sauce and 1 tablespoon of soy sauce. Continue to stir fry until almost cooked through. (I use the pampered chef tool to break up the meat into small pieces).
  • In a bowl, combine the scallions, half of the ginger, cabbage, half of the chili pepper, the garlic, the 3 tablespoons of soy sauce and the lime zest.
  • Add vegetable bowl mixture to wok and continue to stir fry until cooked but still slightly crisp.
  • While the turkey and vegetables cook, make the dipping sauce. In a bowl, combine the remaining ginger and chili pepper, the 1/3 cup of soy sauce, the lime juice, the sesame oil, the honey and a splash of water. Taste and adjust the seasoning; if it's too salty, add another drizzle of honey.
  • Before serving the meat stir in the cilantro leaves.
  • Garnish with extra cilantro leaves and serve with the spicy lime dipping sauce.
  • Wrap in lettuce cups or serve over noodles or rice.

GRILLED ASIAN-STYLE SALMON WITH CABBAGE AND MINT SLAW

Grilled Asian-Style Salmon with Cabbage and Mint Slaw image

Categories     Ginger     Low/No Sugar     Mint     Salmon     Summer     Grill/Barbecue     Healthy     Cabbage     Bon Appétit

Yield Makes 4 servings

Number Of Ingredients 7

1 cup (packed) fresh mint leaves
2 tablespoons chopped peeled fresh ginger
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons oriental sesame oil
4 6-ounce salmon fillets with skin
4 cups thinly sliced Napa cabbage

Steps:

  • Prepare barbecue (medium-high heat). Thinly slice enough mint to measure 2 tablespoonfuls. Place in bowl. Whisk in next 4 ingredients. Set dressing aside.
  • Place salmon in glass pie dish. Add 4 tablespoons dressing and turn to coat. Sprinkle salmon with salt and pepper. Marinate salmon 15 minutes. Grill fillets until barely opaque in center, about 4 minutes per side.
  • Meanwhile, toss sliced cabbage with remaining mint leaves and remaining dressing. Season to taste with salt and pepper. Divide slaw among 4 plates. Place salmon atop slaw and serve.

Tips:

  • Choose the right cabbage: Look for firm, heavy heads of cabbage with tightly packed leaves. Avoid heads with blemishes or signs of wilting.
  • Prepare the cabbage properly: Remove any wilted or damaged outer leaves. Cut the cabbage in half or quarters, then remove the core. Slice or shred the cabbage as desired.
  • Use a variety of cooking methods: Asian cabbage can be stir-fried, sautéed, steamed, boiled, or roasted. Each cooking method will produce a different texture and flavor.
  • Don't overcook the cabbage: Cabbage should be cooked until it is tender but still retains a slight crunch. Overcooked cabbage will be mushy and bland.
  • Season the cabbage well: Asian cabbage has a mild flavor, so it is important to season it well. Use a variety of seasonings, such as salt, pepper, garlic, ginger, soy sauce, and rice vinegar.
  • Serve the cabbage immediately: Cabbage is best served immediately after it is cooked. This will help to preserve its flavor and texture.

Conclusion:

Asian cabbage is a versatile and delicious vegetable that can be used in a variety of dishes. With its mild flavor and slightly crunchy texture, it is a great addition to salads, stir-fries, soups, and stews. By following the tips above, you can cook Asian cabbage perfectly every time.
