Tips:
- Choose the right broccoli: Look for broccoli crowns that are deep green and compact, with tightly closed florets. Avoid crowns that are yellow or have loose, open florets.
- Cut the broccoli into bite-sized pieces: This will help the broccoli cook evenly and make it easier to eat.
- Blanch the broccoli: Blanching the broccoli before stir-frying it helps to preserve its color and nutrients. To blanch the broccoli, bring a large pot of salted water to a boil. Add the broccoli and cook for 1-2 minutes, or until the broccoli is bright green and tender. Immediately remove the broccoli from the boiling water and plunge it into a bowl of ice water to stop the cooking process.
- Use a well-seasoned wok or large skillet: A well-seasoned wok or large skillet will help to prevent the chicken and vegetables from sticking. If you don't have a well-seasoned wok or skillet, you can season it by heating it over medium heat and adding a tablespoon of oil. Swirl the oil around the pan until it coats the entire surface. Remove the pan from the heat and let it cool completely.
- Stir-fry the chicken and vegetables over high heat: This will help to create a nice sear on the chicken and vegetables and lock in their flavor.
- Add the sauce at the end of the cooking process: This will help to prevent the sauce from burning.
- Serve the chicken and vegetables immediately: Stir-fried dishes are best served immediately, while they are still hot and fresh.
