Time 1h50m

Yield 2 servings

Number Of Ingredients 11

2 (10-ounce) filet mignon
2 tablespoons vegetable oil
1 tablespoon fleur de sel
1 tablespoon coarsely cracked black peppercorns
2 tablespoons unsalted butter, at room temperature, optional
Roquefort Chive Sauce, recipe follows
1 1/2 cups heavy cream
2 ounces French Roquefort cheese, crumbled (4 ounces with rind)
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon chopped fresh chives

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat a large, well-seasoned cast iron skillet over high heat until very hot, 5 to 7 minutes.
  • Meanwhile, pat the steaks dry with a paper towel and brush them lightly with vegetable oil. Combine the fleur de sel and cracked pepper on a plate and roll the steaks in the mixture, pressing lightly to evenly coat all sides.
  • When the skillet is ready, add the steaks and sear them evenly on all sides for about 2 minutes per side, for a total of 10 minutes.
  • Top each steak with a tablespoon of butter, if using, and place the skillet in the oven. Cook the steaks until they reach 120 degrees F for rare or 125 degrees F for medium-rare on an instant-read thermometer. (To test the steaks, insert the thermometer sideways to be sure you're actually testing the middle of the steak.)
  • Remove the steaks to a serving platter, cover tightly with aluminum foil and allow to rest at room temperature for 10 minutes. Serve hot with Roquefort Chive Sauce on the side.
  • Bring the heavy cream to a boil in a small heavy-bottomed saucepan over medium-high heat. Cook at a low boil, stirring occasionally, until the mixture has become thick and creamy, about 20 minutes. Remove the pan from the heat, add the cheese, salt, pepper and chives and whisk rapidly until the cheese melts.

Time 3h45m

Yield 6

Number Of Ingredients 6

2 tablespoons vegetable oil
6 pounds beef brisket
1 onion, chopped
2 cloves crushed garlic
1 (1 ounce) package dry onion soup mix
1 pound dried apricots

Steps:

  • In a large heavy skillet, heat oil over medium high heat. When the oil is hot, brown the beef on all sides. If the brisket is too large, cut it in half first, and brown in two stages. Place the meat in a large Dutch oven with a lid.
  • Add onions to the drippings in the skillet. Saute over medium heat until the onions are beginning to brown. Stir in garlic, and cook for 2 or 3 more minutes. Pour over the brisket in the Dutch oven.
  • Empty one package of dry, instant onion soup mix over the browned onions and meat. Arrange all of the apricots on top of the soup mix. Pour enough water around outside of meat, not on top, to cover the sides of brisket. Cover.
  • Bake at 325 degrees F (160 degrees C) for 1 hour. Check liquid; if dish is starting to look dry, add a bit more water around meat. Cover, and cook another hour. Remove lid, and stir apricots into gravy. Leave uncovered, and cook for another hour. Stir gravy again, and add more water if the gravy is too thick. Meat should be very tender; if necessary, bake for an additional 1/2 hour. Cut across grain to serve.

Tips:

  • Choose the right cut of steak: Round steak is a lean cut of beef that is best cooked in a slow cooker or braised. Look for a piece of steak that is about 1 inch thick and has a good amount of marbling.
  • Brown the steak before cooking: Browning the steak in a hot skillet helps to seal in the juices and flavor. Be sure to brown the steak on all sides for even cooking.
  • Use a flavorful marinade: Marinating the steak in a flavorful mixture of herbs, spices, and liquids helps to tenderize the meat and add flavor. You can use a simple marinade made with olive oil, garlic, and rosemary, or try a more complex marinade with ingredients like soy sauce, brown sugar, and orange juice.
  • Cook the steak slowly: Round steak is a tough cut of meat, so it needs to be cooked slowly in order to become tender. The best way to cook round steak is in a slow cooker or braised in a covered pot. Cook the steak for at least 2 hours, or until it is fall-apart tender.
  • Serve the steak with a flavorful sauce: A flavorful sauce can help to enhance the taste of the steak. You can serve the steak with a simple pan sauce made with the drippings from the pan, or try a more complex sauce like a mushroom sauce or a red wine sauce.

Conclusion:

Apricot round steak is a delicious and affordable meal that is perfect for a weeknight dinner. The steak is tender and flavorful, and the apricot sauce is sweet and tangy. This dish is sure to be a hit with your family and friends.
