1 lb seedless dried apricot

4 tablespoons unsalted butter
1 cup diced yellow onion
1 cup diced celery
2 Granny Smith apples - peeled, cored, and cubed
1 tablespoon dried thyme
2 teaspoons rubbed dried sage
1 teaspoon freshly ground black pepper
16 ounces seasoned bread crumbs
2 cups coarsely chopped pecans
