Tips:

  • Make sure the eggs and butter are at room temperature before starting. This will help ensure the batter emulsifies properly and results in a smooth, light cake.
  • Do not overmix the batter. Overmixing can result in a tough, dense cake. Mix just until the ingredients are combined.
  • Bake the cake according to the recipe instructions. Do not open the oven door during baking, as this can cause the cake to fall.
  • Allow the cake to cool completely before filling and rolling. This will help prevent the cake from breaking.
  • Use a sharp knife to trim the edges of the cake. This will help create a clean, even roll.
  • Spread the filling evenly over the cake. Do not overfill the cake, as this can make it difficult to roll.
  • Roll the cake tightly, starting at one end and working your way to the other. Use a piece of parchment paper to help you roll the cake.
  • Chill the cake for at least 30 minutes before serving. This will help the filling set and make it easier to slice.

It is made with a light and fluffy sponge cake that is filled with a sweet and tart apricot jelly and then topped with a rich white chocolate ganache.
