Number Of Ingredients 5

4 1/2 lb corned beef, rinsed
1 c water
1 c apricot preserves
1/4 brown sugar, firmly packed
2 Tbsp soy sauce

Steps:

  • 1. Preheat oven to 350 degrees F (175 degrees C). Coat a large pan with non-stick cooking spray. Place corned beef in dish and add water. Cover tightly with aluminum foil and bake for 2-2 1/2 hours or until tender; drain liquid. In a small bowl combine apricot preserves, brown sugar, and soy sauce. Spread the apricot mixture evenly over the corned beef. Bake uncovered at 350 degrees F (175 degrees C) 25 to 30 more minutes, or until the meat is tender; basting occasionally with pan drippings. Slice corned beef across grain and serve.

Tips:

  • Selecting the Right Corned Beef: Choose a corned beef brisket that is about 3-4 pounds in weight. Look for a brisket that is evenly marbled with fat and has a deep red color.
  • Preparing the Corned Beef: Before cooking, rinse the corned beef under cold water to remove any excess salt. Then, place the brisket in a large pot or Dutch oven and cover it with water. Bring the water to a boil, then reduce heat to low and simmer the brisket for about 2 hours.
  • Making the Apricot Glaze: While the corned beef is cooking, prepare the apricot glaze. In a small saucepan, combine apricot preserves, brown sugar, Dijon mustard, and apple cider vinegar. Bring the mixture to a simmer over medium heat, stirring constantly. Reduce heat to low and simmer for about 10 minutes, or until the glaze has thickened.
  • Glazing the Corned Beef: After the corned beef has been cooked, remove it from the pot and place it on a baking sheet. Brush the apricot glaze all over the brisket, then place it in a preheated oven. Bake the corned beef for about 30 minutes, or until the glaze is bubbly and browned.
  • Serving the Corned Beef: Once the corned beef is cooked, slice it against the grain and serve it with the apricot glaze. You can also serve the corned beef with mashed potatoes, roasted vegetables, or your favorite sides.
