1/2 cup unsweetened applesauce
1/2 cup shortening
1/4 cup honey
1 cup sugar
1/4 cup brown sugar, packed
2 eggs
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
2 teaspoons cream of tartar
2 teaspoons cinnamon (set aside)
2 tablespoons sugar (set aside)

Steps:

  • Heat oven to 375 degrees.
  • In a large bowl, whisk together the applesauce, shortening, honey, sugars and the eggs.
  • In a separate bowl, sift together the flour, baking soda, salt, nutmeg, and cream of tartar. Slowly stir the dry ingredients into the wet ones. Cover and place in the freezer for about 45 minute This makes it easier to handle the dough later.

1/2 cup granulated sugar, plus 3 tablespoons for rolling
1/4 cup packed light brown sugar
1 large egg
1/4 cup plus 2 tablespoons finely chopped red and green crispy apple chips, plus whole chips for garnish
2 teaspoons apple pie spice

  • Preheat the oven to 400 degrees F.
