Applesauce Brandied Raisin Bread image

Have been sifting through another batch of recipes that I'd filed away over 25 years ago, & for those of you who ALSO like raisins....

Provided by Sydney Mike

Categories     Quick Breads

Time 1h15m

Yield 1 loaf, 12 serving(s)

Number Of Ingredients 12

1 1/2 cups dark raisins
1/3 cup cherry brandy
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon low sodium salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 cup applesauce
2 eggs, beaten
1/4 cup dark brown sugar, packed
1/3 cup vegetable oil
1/2 cup walnuts, chopped

Steps:

  • Preheat oven to 350 degrees F, then grease & flour one 9 inch loaf pan.
  • Soak raisins in brandy 15 minutes.
  • In large bowl, stir together flour, baking powder, salt, cinnamon & cloves, then set aside.
  • In medium bowl, combine applesauce, eggs, brown sugar & oil, mixing well.
  • Add raisins & nuts to applesauce mixture & mix well.
  • Add fruit mixture to flour mixture & stir only until flour is moistened.
  • Pour into greased pan & bake 50-55 minutes.
  • Cool in pan 15 minutes before removing loaf of bread to cool completely on wire rack.

Tips:

  • Choose the right apples: Use a variety of apples that will give your bread a mix of flavors and textures. Granny Smith apples are a good choice for their tartness, while Honeycrisp apples add sweetness and a crisp texture.
  • Don't overcook the applesauce: You want the applesauce to be thick and chunky, not watery. Cook it until the apples are soft and starting to break down, but not completely mushy.
  • Use fresh raisins: Fresh raisins will give your bread a plump and juicy texture. Avoid using dried raisins, as they can be tough and chewy.
  • Let the bread cool completely before slicing: This will help the bread to hold its shape and prevent it from crumbling.

Conclusion:

Applesauce raisin bread is a delicious and versatile bread that can be enjoyed for breakfast, lunch, or dinner. It's also a great way to use up leftover applesauce. With its moist and flavorful crumb and sweet and tangy applesauce filling, this bread is sure to be a hit with everyone who tries it.
