APPLESAUCE OATMEAL CAKE

Applesauce Oatmeal Cake image

I got this from another site, where it was credited to Meal Master. It's not a fancy dessert-for-dinner cake, but more like a snack cake or coffee cake. It's very moist and buttery-sugary.

Time 55m

Yield 6-8 serving(s)

Number Of Ingredients 11

1 1/4 cups unsweetened applesauce
3/4 cup quick-cooking oats
3/4 cup raisins
1/2 cup butter or 1/2 cup margarine, softened
3/4 cup brown sugar, firmly packed
1 egg
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon ground cloves

Steps:

  • Bring applesauce to a boil in a small saucepan; remove from heat.
  • Stir in oats and raisins; cover and let stand 20 min.

  • Gradually add sugar, beating well.
  • Add egg and beat well.
  • Combine dry ingredients and add gradually to creamed mixture, mixing just until blended after each addition.
  • Stir in applesauce mixture.
  • Pour batter into a 9-in. square pan that has been sprayed with nonstick spray.
  • Bake at 350 for 30-40 min. or until a toothpick inserted in center comes out clean.
  • Cool in pan on a wire rack.
  • (I found I liked this best served slightly warm.).

After enjoying this recipe for more than 30 years, I knew it was time to revise it. I was happy to discover that replacing the oil with applesauce and using fat-free half-and-half didn't alter the flavor of my favorite snack. -Pat Van Cleve of Winston-Salem, North Carolina

Tips:

  • Use ripe apples for the applesauce. This will give the cake a more intense apple flavor. You can use any type of apples you like, but some good choices include Granny Smith, Honeycrisp, or Pink Lady.
  • Be sure to drain the applesauce well before adding it to the cake batter. Otherwise, the cake will be too wet and dense.
  • Don't overmix the batter. Overmixing can make the cake tough.
  • Bake the cake until a toothpick inserted into the center comes out clean. If the toothpick comes out with batter or crumbs attached, the cake needs to bake longer.
  • Let the cake cool completely before frosting it. This will help the frosting to set properly.
  • If you don't have time to make your own applesauce, you can use store-bought applesauce. Just be sure to choose a brand that is unsweetened.
  • This cake can be stored at room temperature for up to 3 days. You can also freeze the cake for up to 2 months.
