Steps:
- Combine first 5 ingredients in mixing bowl and beat for 1 minute.
- Combine remaining ingredients except nuts and add to applesauce mixture beating until smooth.
- Stir in nuts.
- Spoon into greased loaf pan and bake at 350 degrees 40-45 minute.
- Allow to cool in pan on rack for 10-15 minutes, then remove from pan and continue to cool on rack.

- Preheat oven to 350F. Spray 2 loaf pans with non stick cooking spray. Cream together butter & sugar. Beat in eggs, one at a time. Stir in applesauce & milk. Combine dry ingredients; add to applesauce mixture & mix well. Stir in remaining ingredients. Pour into loaf pans. Bake for 1 hour or until bread tests done. Cool on rack for 10 minutes. Remove bread from pan & finish cooling on rack.

Steps:
- 1. Preheat oven to 350°F. Grease a 9x5x3 inch loaf pan.
- 2. In mixing bowl, sift flour, sugar, baking powder, cinnamon, salt, & baking soda. Add pecans to dry mixture, if using, and mix them in.
- 3. Combine egg, applesauce and either, shortening, butter, or vegetable oil; add flour mixture to egg mixture. Stir, just until blended.
- 4. Put batter into prepared loaf pan. Bake in preheated oven. Test bread for doneness, with a knife, in the middle of the bread, after 45 minutes. Cook longer, if not done, up to another 15 minutes.
- 5. Take pan out of oven. Cool in pan for 10 minutes; remove bread from pan. Cool on rack.
