1 cup whole wheat flour
1/2 cup wheat germ
1 cup dark brown sugar
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1 tablespoon ground cinnamon

1 cup finely shredded zucchini, patted dry of excess moisture (about 1 medium)
2 eggs, lightly beaten
3/4 cup milk
1/2 cup applesauce
1/4 cup canola oil
1 teaspoon pure vanilla extract
4 ounces cream cheese, at room temperature
Zest and juice of 1 medium orange
2 tablespoons pure maple syrup

Steps:

  • Stir boiling water into dry gelatin mix in medium bowl at least 2 min. until completely dissolved. Remove 3/4 cup of the gelatin; pour into small bowl.
