i needed a recipe for a family function, and i found a applesauce cake recipe. i dressed it up a bit and here it is, and by the way, it is wonderful!

1 c vegetable shortening or butter
2 c sugar
2 tsp baking soda
2 tsp cinnamon
1 tsp pumpkin pie spices
2 eggs
4 c self rising flour
16 oz applesauce
1 pkg vanilla instant pudding

Steps:

  • 1. cream together shortening and sugar, mix applesauce and baking soda, combine the two mixtures. add eggs one at a time making sure the first is well mixed before adding next one. add spices and flour. batter will be thick.
  • 2. preheat oven to 350 degrees, pour batter in a well greased and floured bunt pan. bake for 1 hour or until knife comes out clean. let cool 20 minutes and invert onto a cake plate. glaze or serve as is. **I have added vanilla pudding to the recipe, as the cake was a little dry after a day, this fixes that issue**

  • Cream butter or margarine with sugar. Add applesauce; beat well. Stir in flour, soda, and spices. Add nuts and raisins.

1/2 cup butter ((room temperature))
1 cup sugar
1 large egg
1 cup raisins
1 cup black walnuts ((or English walnuts))
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cloves
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 1/2 cups unsweetened applesauce

Steps:

  • Grease a 10 cup bundt cake pan generously with shortening, then dust with flour (or use our perfect cake release). Preheat the oven to 350º Fahrenheit.
  • In the bowl of a stand mixer (or using a hand mixer), cream the butter and sugar until well blended and smooth, scraping the sides of the bowl as needed.
  • Add the egg. Mix until blended.
  • Mix in the raisins and walnuts.
  • In a small bowl, whisk together the flour, soda, salt, cloves , nutmeg and cinnamon.
  • Add the applesauce and flour to the butter mixture alternately, mixing well between each addition. Batter will be thick.
  • Add the batter to the pan by large spoonfuls and smooth out evenly.
  • Bake for 45 minutes or until the top of the cake springs back when you touch it. The exact time will depend on the shape of your bundt cake pan. If it makes a thicker cake, it could take up to an hour to bake. Ours took 45 minutes in the Autumn Wreath Bundt Pan.
  • Allow the cake to cool in the pan for 5 minutes, then turn out on a cake plate to cool completely.
  • Dust with powdered sugar if desired.

1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon freshly grated nutmeg
2 sticks unsalted butter, at room temperature
2 cups light brown sugar
2 large eggs
2 cups no-sugar-added applesauce
Powdered sugar, optional

Steps:

  • Preheat the oven to 350 degrees F. Adjust the racks to the center of the oven. Spray a Bundt pan with nonstick spray.
  • Whisk together the flour, baking soda, cinnamon, salt, ginger, cloves and nutmeg in a large bowl. Beat together the butter and brown sugar in a separate bowl with an electric hand-held mixer until light and fluffy, about 4 minutes. Add the eggs, one at a time, until incorporated. 1 1/2 cup firmly packed light-brown sugar

1 1/2 cup currants
1 1/2 cup coarsely chopped walnuts
2 2/3 cups cake flour
3/4 teaspoon coarse salt
3/4 teaspoon ground cloves
1 1/2 teaspoon baking soda

3/4 teaspoon freshly grated nutmeg
1 1/2 cup thick applesauce, warmed

Steps:

  • Preheat oven to 350 degrees. Butter and flour a 12-cup nonstick Bundt pan. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy; add eggs and beat well.
  • Combine the raisins, currants, and walnuts in a small bowl. Sprinkle with a tablespoon of flour and toss to coat to prevent sinking during baking.
