Number Of Ingredients 16

2 cups all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 cup (8 ounces) vanilla yogurt
1 egg
1/4 cup canola oil
2 tablespoons milk
1 small tart apple, peeled and chopped
1/3 cup raisins, optional
TOPPING:
2 tablespoons all-purpose flour
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1 tablespoon cold butter

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, salt and cinnamon. Combine the yogurt, egg, oil and milk; stir into dry ingredients just until moistened. Stir in apple and raisins if desired (batter will be thick). Fill greased or paper-lined muffin cups two-thirds full., For topping, in a small bowl, combine the flour, sugar and cinnamon; cut in butter until crumbly. Sprinkle over batter. , Bake at 400° for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

1 tablespoon butter, softened
1/2 teaspoon ground cinnamon
2 cups flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 (8 ounce) carton nonfat vanilla yogurt
1 egg
1/4 cup vegetable oil
2 tablespoons low-fat milk
3/4 cup peeled and chopped apple
1/3 cup raisins

Steps:

  • Preheat oven to 400 degrees.
  • Place baking cups in a muffin pan.
  • For topping: Combine topping ingredients until crumbly; set aside.
  • For muffins: Combine flour, sugar, baking powder, salt and cinnamon in large bowl.
  • Beat together yogurt, egg, oil and milk in small bowl.
  • Add to flour mixture; stir just until dry ingredients are moistened.

8 0unces vanilla yogurt
1 egg
1/4 c vegetable oil
2 Tbsp milk
1 small apple peeled and chopped
1/3 c raisins or dry cranberries
2 all purpose flour
1/2 c sugar
3 tsp baking powder

Steps:

  • 1. In mixing bowl combine flour, sugar, baking powder and cinnamon...In another bowl beat together yogurt, oil, egg and milk..stir into dry ingredients just until moistened..mix in the apples and raisins. batter will be thick
  • 2. Fill greased or paper lined 12 muffin tin, fill two-thirds full...You can bake them with no topping or you can top it with a mixture of 2 tablespoons flour,2 tablespoons sugar ,,1/2 tsp cinnamon and 2 tbsp cold butter..using pastry blender to incorporate the ingredients..and sprinkle it on top...Bake in 375F oven for 25 minutes or when toothpick inserted comes out clean..cool for 10 minutes before removing muffins to wire rack to cool.
