Steps:
- First make the breadcrumbs in a food processor, so they are fine.
- Mince (or grind) the pork, then add the onion to the grinder, and finally the apple (peeled and cored). Add all the herbs and nutmeg and salt and pepper to taste.
- Fill your sausage filler (either machine or hand operated one) and put the skins over the end of the nozzle.
- Fill slowly so that the skins do not burst, and twist the finished sausages into the required size.
- Since nothing has been pre-frozen, these will freeze well.
- Various adaptations can be made, by adding either sun-dried tomato puree, or garlic puree for instance.
- Prior to cooking, pierce the skins to prevent bursting.

APPLE SAUSAGE BREAKFAST RING
I came across this hearty breakfast when we were on vacation in Tennessee, and I adapted the recipe to our tastes. Now it's one of our most favorite breakfasts-especially when we have overnight guests. My husband and I are busy with our own construction company. So I appreciate recipes like this that can be made up in advance and frozen. It's quick and easy to thaw this breakfast ring overnight and then cook it in the microwave while preparing the eggs to be placed in the center.

Tips:
- Choose the right sausage: Use a breakfast sausage that is mild in flavor, such as a maple or sage sausage. This will help to balance out the sweetness of the apples.
- Don't overcook the sausage: Overcooked sausage will be dry and tough. Cook it just until it is browned on the outside and cooked through on the inside.
- Use a variety of apples: Different varieties of apples will give your sausage a different flavor. Try using a mix of sweet and tart apples, such as Granny Smith, Honeycrisp, and Braeburn.
- Don't skimp on the spices: Spices are essential for giving your sausage flavor. Be sure to use a generous amount of salt, pepper, and other spices, such as sage, thyme, and nutmeg.
- Cook the sausage in a single layer: This will help to ensure that the sausage cooks evenly.
- Serve the sausage immediately: Sausage is best served hot and fresh. If you need to make it ahead of time, you can cook it and then reheat it in a low oven or in the microwave.
Conclusion:
Apple pork breakfast sausage is a delicious and easy-to-make dish that is perfect for a weekend brunch or breakfast. With just a few simple ingredients, you can create a flavorful sausage that your family and friends will love.
