Number Of Ingredients 9

1 3/4 cups all-purpose flour
3/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
2/3 cup orange juice
1/3 cup (5 1/3 tablespoons) unsalted butter, melted and cooled slightly
2 large eggs, lightly beaten
1 1/2 cups coarsely chopped golden Delicious apples
1/2 cup coarsely chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9 x 5 x 3-inch loaf pan.
  • In a large bowl, sift together the flour, the sugar, the baking powder, and the salt, making a well in the center. Set aside. Pour the batter into prepared pan and bake for 50-60 minutes or until a cake tester inserted into center of loaf comes out with moist crumbs attached. Do not overbake.

Tips:

  • Use fresh, ripe apples: This will ensure the best flavor and texture in your quick bread. Choose apples that are firm enough to hold their shape when baked, such as Granny Smith or Honeycrisp.
  • Chop the apples into small pieces: This will help them distribute evenly throughout the bread. You can use a food processor or a sharp knife to chop the apples.
  • Toast the pecans: Toasting the pecans will enhance their flavor and give them a slightly crunchy texture. You can toast the pecans in a skillet over medium heat for 5-7 minutes, or in the oven at 350 degrees Fahrenheit for 10-12 minutes.
  • Don't overmix the batter: Overmixing the batter will result in a tough, dense quick bread. Mix the batter just until the ingredients are combined.
  • Bake the quick bread at the right temperature: The ideal temperature for baking quick bread is 350 degrees Fahrenheit. This will help the bread to rise evenly and prevent it from becoming too dry.
  • Let the quick bread cool completely before glazing it: This will help the glaze to set properly and prevent it from running off the bread.

Conclusion:

This apple pecan oat quick bread with cream cheese glaze is a delicious and easy-to-make treat. It's perfect for breakfast, brunch, or a snack. The apples and pecans add a delicious sweetness and crunch, while the cream cheese glaze adds a rich and creamy flavor. Follow the tips above to ensure that your quick bread turns out perfectly every time.
