APPLE OF HER EYE PIE

Yield 8 people

Number Of Ingredients 7

8 tart apples (such as Macintosh)
4 Tbs (1/2 stick) butter
1/2 Cup plus 2 Tbs sugar
2 Tbs cornstarch
3/4 tsp cinnamon
1 tsp grated lemon zest
1 tsp vanilla extract

Steps:

  • Preheat oven to 350 degrees. Core, halve, and peel the apples. Cut into 1 inch chunks. Combine the apples and melted butter in a large bowl. Add the remaining ingredients and toss until the apples are evenly coated. Roll premade dough to form a 12 inch circle. Transfer it to a 10 inch pie plate and press it into the bottom and sides of the plate. Leave a 1 inch overhang. Fill the pie plate with the apple mixture, mounding it toward the middle. Brush the edge of the bottom crust with water. Roll second piece of premade dough to 12 inches, transfer on top of the apple mixture and crimp the edges together. Prick the top crust with a fork (I usually make a smiley face). Bake until the filling is bubbling and the top is golden, about 1 1/4 hours.

Tips:

  • Use a variety of apples. This will give your pie a more complex flavor. Some good choices include Granny Smith, Honeycrisp, and Braeburn apples.
  • Peel and core your apples before slicing them. This will make it easier to slice the apples evenly and will also help to prevent the apples from browning.
  • Slice your apples thinly. This will help them to cook evenly and will also make it easier to fit them into the pie crust.
  • Add some sugar and spices to your apples. This will help to sweeten the apples and add some flavor. Some good choices include cinnamon, nutmeg, and ginger.
  • Use a good quality pie crust. This will make a big difference in the overall flavor of your pie. You can either make your own pie crust or use a store-bought one.
  • Don't overfill your pie crust. This will make it difficult to seal the pie and will also make the pie more likely to burst.
  • Bake your pie at a high temperature for the first 15 minutes. This will help to set the crust and prevent the pie from becoming soggy.
  • Reduce the temperature after 15 minutes and continue to bake until the pie is golden brown and the filling is bubbling.
  • Let your pie cool for at least 1 hour before serving. This will allow the filling to set and will make the pie easier to slice.
