APPLE OATMEAL CASSEROLE

This is so easy to put together. Great for a Sunday morning family breakfast. But since we're empty-nesters, I bake it on Sunday and we eat it all week for breakfast. Just scoop out a serving and heat it in the microwave with a little extra milk!

Time 55m

Number Of Ingredients 9

2-3 medium apples, chopped (2 cups)
1/2 c raisins
2 Tbsp butter
1 tsp cinnamon
1/4 tsp nutmeg (optional)
1/3 c packed brown sugar
2 2/3 c old-fashioned oats
4 c mlk
1/4 tsp salt

Steps:

  • 1. In a large skillet, melt the butter over medium-high heat. Add apples, raisins, sugar, cinnamon and salt; saute until apples are slightly soft. In 2-quart casserole, combine oats and milk. Stir in apple mixture. Bake uncovered at 350 degrees for 30-40 minutes, until most of the milk is absorbed. If using a flat casserole, it only takes about 30 minutes. If using a round casserole, bake about 40 minutes.
  • 2. Serve with additional milk if desired. Also good with some chopped walnuts sprinkled on top.

Tips:

  • Use ripe apples: Softer, sweeter apples, like Honeycrisp, Gala, or Fuji, will give the casserole the best flavor and texture.
  • Don't overmix the batter: Overmixing will develop the gluten in the oats, making the casserole tough. Mix just until the ingredients are combined.
  • Bake until the center is set: The casserole is done when a toothpick inserted into the center comes out clean. If it's still gooey, bake for a few more minutes.
  • Let the casserole cool slightly before serving: This will help it hold its shape when you cut it.
  • Serve with your favorite toppings: Try maple syrup, brown sugar, chopped nuts, or fresh fruit.

Conclusion:

This apple oatmeal casserole is a delicious and easy way to start your day. It's packed with flavor and nutrients, and it's sure to please everyone at the table. Whether you're serving it for breakfast, brunch, or dessert, this casserole is a surefire hit.
