1/2 cup old-fashioned oats
1-3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup sugar
3/4 cup packed brown sugar
1/3 cup unsweetened applesauce
1 large egg
1-1/2 teaspoons vanilla extract
1 medium apple, peeled and chopped
TOPPING:
1/2 cup old-fashioned oats
1/4 cup all-purpose flour
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
3 tablespoons cold butter

Steps:

  • In a bowl, combine boiling water and oats; set aside. In a large bowl, combine the flour, baking soda, cinnamon and salt. In a bowl, combine the sugars and applesauce; beat well.
