Number Of Ingredients 21

2/3 cup all-purpose flour
1/4 cup (packed) light or dark brown sugar
2 Tbsp organic cane sugar
1 tsp ground cinnamon
5 Tbsp unsalted butter, melted
2 cups all-purpose flour, spooned and leveled
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp kosher salt
1 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1/8 tsp ground cloves
1/2 cup (1 stick) unsalted butter, softened
1 cup organic cane sugar
2 large eggs ¹
1-1/2 tsp pure vanilla extract
1-1/2 cups (about 2 small) tart apples, peeled and diced
1/2 cup confectioners sugar, sifted
1-1/2 Tbsp whole milk
1/2 tsp pure vanilla extract

Steps:

  • In a small mixing bowl, whisk together the flour, brown sugar, cane sugar, and cinnamon until combined.
  • Stir in the melted butter until incorporated, then use your fingers to form thick crumbs. Set aside.
  • Preheat the oven to 425℉. Line a 12-cup muffin tin with paper liners or lightly grease with butter or nonstick baking spray. Set aside.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.
  • Using a stand up mixer fitted with the paddle attachment, cream together the butter and sugar until light and fluffy, about 2 minutes.
  • Turn the mixer down to low, and add the eggs, one at a time, followed by the vanilla, mixing well after each addition. Scrape down the sides of the bowl with a spatula as needed.
  • Add the flour mixture to the mixer along with the chopped apples, and switch to a spatula to mix until just combined. Be careful not to over mix. The batter will be very thick.
  • Use a medium cookie scoop to divide the batter between the prepared muffin cups. Top with the streusel, pressing the crumbs gently into the tops of the muffin batter.
  • Bake at 425℉ for 5 minutes, then turn the oven temperature down to 350℉, and continue baking for another 12-15 minutes, until the muffin tops are golden and a cake tester inserted into the center comes out clean.
  • Remove from the oven, and allow the muffins to cool for a few minutes in the muffin tin, before transferring to a baking rack to cool completely.
  • In a small mixing bowl, whisk together the confectioners sugar, milk, and vanilla until smooth. Drizzle over the warm muffins. Enjoy!!

EASY APPLE CINNAMON MUFFINS

Easy Apple Cinnamon Muffins image

A really easy apple cinnamon muffin recipe.

Provided by Mindy

Categories     Bread     Quick Bread Recipes     Muffin Recipes     Apple Muffin Recipes

Time 45m

Yield 6

Number Of Ingredients 13

1 ½ cups all-purpose flour
¾ cup white sugar
½ teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
⅓ cup vegetable oil
1 egg
⅓ cup milk
2 apples - peeled, cored and chopped
½ cup white sugar
⅓ cup all-purpose flour
½ cup butter, cubed
1 ½ teaspoons ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups or line with paper muffin liners.
  • Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.
  • In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon. Mix together with fork and sprinkle over unbaked muffins.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.

Tips:

  • For the best streusel topping, use a combination of light and dark brown sugar. The dark brown sugar will give the streusel a richer flavor and color.
  • If you don't have maple syrup, you can substitute another liquid sweetener, such as honey or agave nectar.
  • To make the muffins even more flavorful, add a teaspoon of cinnamon or nutmeg to the streusel topping.
  • For a crunchy streusel topping, use a fork to crumble the streusel mixture before sprinkling it over the muffins.
  • Be careful not to overmix the muffin batter. Overmixing can result in tough, dense muffins.
  • Fill the muffin cups only 2/3 full. This will allow the muffins to rise properly and prevent them from overflowing.
  • Bake the muffins until a toothpick inserted into the center comes out clean. This will ensure that the muffins are cooked through.

Conclusion:

Apple cinnamon maple streusel muffins are a delicious and easy-to-make breakfast treat. They are packed with flavor and have a tender, moist crumb. The streusel topping adds a delightful crunch and sweetness to the muffins. These muffins are sure to be a hit with everyone who tries them.
