APPLE-CINNAMON COFFEECAKE/COFFEE CAKE (COOKING LIGHT)

Apple-Cinnamon Coffeecake/Coffee Cake (Cooking Light) image

This is a moist, easy, healthy and delicious coffee cake with a streusel topping. I modified the original recipe a little but included the original amounts in brackets so you can make my adapted version or the original. The magazine recommends serving it warm (you can rewarm slices for a few seconds in the microwave). Recipe can easily be doubled. MAKE AHEAD: Cool completely, wrap (still in the pan) in foil, and leave out at room temperature for up to one day, or freeze for up to three months. To reheat thawed cake, unwrap and bake at 250 F for 15-20 minutes. The recipe is from Robin Miller in "Cooking Light" (Nov. 2007).

2/3 cup granulated sugar (original recipe calls for 1 cup)
1 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
3/4 cup 1% low-fat milk
2 tablespoons butter, melted
1 teaspoon vanilla extract

Spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Press crumbs into the batter very gently.

Tips:

  • For a moist and tender crumb, use a combination of all-purpose flour and cake flour. Cake flour has a lower protein content than all-purpose flour, which results in a more tender cake.
  • To ensure even baking, make sure all of your ingredients are at room temperature before you start mixing the batter. This will help the ingredients blend together more smoothly and evenly.
  • Do not overmix the batter. Overmixing can develop the gluten in the flour, which can result in a tough cake. Mix the batter just until the ingredients are well combined.
  • For a streusel topping that is both crispy and flavorful, use a combination of brown sugar, granulated sugar, and spices such as cinnamon and nutmeg.
  • To prevent the streusel topping from burning, bake the coffee cake at a moderate temperature (350 degrees Fahrenheit) and keep an eye on it while it is baking.

Conclusion:

Apple cinnamon coffee cake is a classic breakfast treat that is perfect for any occasion. With its moist and tender crumb, streusel topping, and sweet and cinnamony apples, this coffee cake is sure to be a hit with everyone who tries it. Whether you are serving it for a special brunch or simply enjoying it as a sweet snack, this coffee cake is sure to please.
