1 stick salted butter, at room temperature, plus more for buttering the pan
1 1/2 cups vanilla wafer cookies, such as Nilla, crushed
1 cup all-purpose flour
1 tablespoon baking powder
3 large eggs, at room temperature
3/4 cup plus 2 teaspoons granulated sugar
2 large apples such as Honey Crisp, peeled and cut into small dice
1 teaspoon ground cinnamon
1 teaspoon grated lemon zest
3/4 cup semisweet chocolate chips
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-inch springform pan and dust all sides with the crushed vanilla wafers; set aside. Sift the flour and baking powder together in a small bowl and set aside.
  • Using a mixer fitted with the whisk attachment, whisk the eggs on high speed until pale and very thick, 8 to 10 minutes.
  • Meanwhile, melt the butter in a medium saucepan and cook, scraping the sides and bottom of the pan to prevent burning, until the butter browns and smells nutty, 6 to 8 minutes.
  • Add 3/4 cup of the granulated sugar to the eggs. Add one-third of the flour mixture, then half of the butter, another third of the flour, the remaining butter and the rest of flour, mixing between additions. Whisk until just barely combined. 1 box chocolate cake mix, plus additional ingredients for making the cake
1 store-bought 8-inch apple pie
8 ounces bittersweet chocolate chips
1 cup heavy cream
1 tablespoon dark rum
Kosher salt
1 cup chopped pecans

Steps:

  • For the chocolate apple pie cake: Preheat the oven to 350 degrees F.
  • Use the butter to grease the bottom and sides of a 9-inch cake pan or springform pan. Cut out a circle of parchment paper to fit the pan and place it on the bottom.
  • In a large bowl, prepare the cake batter as instructed on the box. Pour 1 cup of the batter into the cake pan and spread it out. Add the apple pie on top of the cake batter, then pour the rest of the cake batter over the top and around the sides. Spread it to make sure there are no air pockets.
  • Bake the cake until a toothpick inserted in the center and around the edges comes out clean, 50 to 55 minutes. Remove to a rack to cool slightly. When cool enough to handle, turn the cake out onto the rack, peel off the parchment paper and allow to cool completely.

This is a bit of a work in progress. I made this cake up because I had apples to use up and was craving something chocolate-y. It's quickly made with ingredients which I usually have on hand, and it tastes pretty good, but it's not five-star-terrific yet. So if you choose to try it and come up with suggestions to improve it, I'd be very grateful! I used erythritol in place of sugar, but of course you can use sugar or xylitol. I think half brown sugar or evaporated cane juice would be very good, too. With 2/3 cup sugar it's probably not very sweet, so if you're sweet toothed, use 3/4 cup of sugar or other sweetener. Don't overbake it or it will get dry. I found that the toothpick should not come out completely clean. The cake is ready when it feels soft and springy pressing the top slightly, 35 minutes in my oven.

1/3 c skim milk

APPLE TOPPING
2 c peeled, diced apples
1/2 c orange juice
3 Tbsp water
1 Tbsp cornstarch
3 large graham crackers, crushed
1 tsp cinnamon

  • 1. FOR CAKE:
  • 2. In a small bowl mix dry ingredients
  • 3. In a cup, combine milk and vinegar
  • 4. In a large bowl beat together applesauce, honey, egg whites ,oil, vanilla and milk mixture with electric mixer on low.
  • 5. stir in flour mixture and mix well
  • 6. coat an 8X8 baking pan with cooking spray, add the batter and bake in a preheated 350 degree oven for 35 to 40 minutes
  • 7. Let cool 5 minutes before adding the topping
  • 8. TOPPING: while the cake is baking, combine the apples and orange juice in a 2 quart saucepan.
  • 9. Cover and cook over medium heat for 3 to 4 minutes, or until apples are tender
  • 10. in a cup mix the water and cornstarch. pour into the hot apple mixture and cook about 1 minute, until thickened. set aside and cool until needed
  • 11. when cake is ready, spread the topping over it. sprinkle with the crumbs and cinnamon
  • 12. Broil about 2" from the heat for about 1 to 2 minutes. watch carefully so topping doesn't burn.
  • 13. Calories : 162 4.5 grms fat no cholesterol 131 mg sodium
