This recipe originated with my son, who makes it with very spicy chicken sausages. I loved it so much that I adapted it to suit our taste. Because my husband prefers less spicy food, I use milder chicken-apple sausage. This is one of our favorite dinners.

2 tablespoons olive oil
2 sweet red peppers, chopped
1 large onion, chopped
4 cloves cloves garlic, minced or pressed through a garlic press
5 links precooked chicken and apple sausage, sliced into 1/4-thick rounds
3 (16 ounce) packages penne pasta
garlic and herb seasoning blend (such as Mrs. Dash®) to taste
sea salt to taste
ground black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a boil. Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through but still firm to the bite, about 11 minutes; drain.

8 bone-in chicken thighs (3 pounds), skin removed
2 tablespoons butter
1 medium red onion, chopped
1 celery rib, chopped
2 tablespoons minced fresh parsley
Salt and pepper to taste
3 tablespoons all-purpose flour
3 cups chicken broth
1 cup apple cider or juice
DUMPLINGS:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon cold butter
1 large egg, room temperature, lightly beaten
2/3 cup 2% milk

Steps:

  • Preheat oven to 350°. In a Dutch oven, brown chicken in butter; remove and set aside. In the same pan, combine the onion, celery, parsley, salt and pepper; cook and stir until vegetables are tender. Sprinkle with flour and mix well. Add broth and cider. 1 pkg (12 oz) apple chicken sausage links (johnsonville)
1/4 c chopped carrot
1/4 c chopped onion
1/4 c chopped celery
1 Tbsp olive oil
1/4 c butter
3 Tbsp flour
2 c chicken broth
1/4 c frozen peas (no need to thaw)
1 c baking mix (bisquick)
1/3 c milk

Steps:

  • 1. Slice sausage links into coins, about 1/4-inch thick.
  • 2. In a large saucepan, sauté the sausage, carrots, celery and onion in oil for 2-3 minutes until vegetables are tender. Set aside.
  • 3. In the same pan, melt butter over medium heat. Stir in flour until smooth. Gradually add chicken broth. Bring to a boil; cook and stir for 1 minute or until thickened.
  • 4. Stir in peas. Return sausage mixture to pan.
  • 5. In a bowl, combine biscuit mix and milk until a soft dough forms. Drop by tablespoonfuls onto boiling sausage mixture. Reduce heat; cook uncovered 10 minutes. Cover pan; cook 10 minutes longer.

1 onion, sliced

3 cups apple cider or apple juice
1 pound small Yukon Gold potatoes, scrubbed but not peeled
1 ½ pounds finely shredded green cabbage
salt and freshly ground black pepper to taste
2 tablespoons Dijon mustard, for garnish
2 tablespoons chopped fresh parsley, for garnish

  • Combine butter and olive oil in a Dutch oven over medium heat; add sausages and cook until browned on all sides, 6 to 8 minutes.
