2 tablespoons neutral oil
2 bone-in pork chops
Kosher salt and freshly cracked black pepper
3/4 cup chicken stock
1 shallot, diced
1 tablespoon stone-ground mustard
2 teaspoons apple butter

Steps:

  • Heat the oil in a large skillet over medium-high heat. Sprinkle the pork chops with salt and pepper on both sides and cook, flipping once, until nicely browned and cooked to 150 degrees F or desired doneness, 5 to 7 minutes per side. Set the chops aside and reserve the skillet.
  • Pour the chicken stock into the skillet and scrape with a wooden spoon to lift any browned bits. Add the shallots and cook, stirring occasionally, until the stock is reduced by half, about 4 minutes. Whisk in the mustard and apple butter. Turn off the heat and continue whisking until the sauce coats the back of a spoon, about 1 minute. Season as desired with freshly cracked black pepper.

I found this recipe on Mr. Food Everyday Diabetic Recipes. My husband and I made it for Easter 2014. We liked it so much we made it again for Christmas. This will be the only glaze we will use on our hams from now on. It surpasses any purchased glaze.

1 6-10 lb. bone in smoked ham
3/4 c apple butter
1/4 c dijon mustard
1/4 c light brown sugar, lightly packed
1/4 c sugar-free maple syrup
1/4 tsp ground cloves
1/4 tsp salt

Steps:

  • 1. Preheat oven to 325°F. Score the ham with a paring knife through the skin and fat in a tight crosshatch pattern. Place the ham, fat side up, in a large roasting pan. Bake 1 hour.
  • 2. Whisk the apple butter, mustard, brown sugar, syrup and cloves in a bowl until smooth. At this point you could put in small sauce pan and heat to melt the flavors together. Brush the ham with half the glaze and bake for 15 more minutes.
  • 3. Brush remaining glaze over ham and bake another 15 minutes or until ham is heated through. NOTE: At this time you may add sliced pineapple and maraschino cherries, using tooth picks to keep in place.
  • 4. Let rest for 15 minutes before carving.

5 lbs macintosh apples, scrubbed and quartered (not peeled)
4 cups apple juice
2 cups brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg
1 lemon, juice of
1 (10 lb) ham
1 carrot, chopped
1 celery, chopped
1 leek, chopped
1 onion, chopped
1 head of garlic, halved
1 cup apple butter
1/2 cup honey
1/4 cup Dijon mustard
4 cups water

Steps:

  • For the apple butter:.
  • In a large stockpot, combine the apples with the apple juice. Cook on low heat until the apples are tender, about 45 minutes. Remove from heat and pass through a fine sieve. Pour the puree back in the stockpot. Bring to a simmer and add the brown sugar, cinnamon, nutmeg, and lemon juice. Cook on low heat for about 1 1/2 hours until it's reduced by half and thickens up, stirring regularly and skimming the surface if necessary. Remove from heat and let cool.
