Time 45m

Yield 10 crepes, 4 serving(s)

Number Of Ingredients 7

extra virgin olive oil
1/2 cup apple butter
1/2 lb prosciutto, thinly sliced
2 granny smith apples, cored and thinly sliced
10 ounces brie cheese, sliced
1 bunch watercress or 1 bunch arugula
fresh ground black pepper

Bake for 10-12 minutes, rotating the baking sheets (top shelf to bottom shelf) halfway through until crisp like a thin pizza. Take the crepes out of the oven and lay a few slices of the brie on top so it melts slightly. Add a handful of watercress or baby lettuce and several turns of freshly ground black pepper.

TAFFY APPLE DIP

Taffy Apple Dip image

A yummy dip for apples that I got from my grandmother. We usually use Granny Smiths, but it would be good on any kind, as well as grapes or other fruit. It is a great finger food for parties!

Time 10m

Yield 1 1/2 cup, 6-8 serving(s)

Number Of Ingredients 5

1 (8 ounce) package cream cheese
3/4 cup brown sugar, packed
1/4 cup sugar
1 teaspoon vanilla extract
1 cup finely chopped dry roasted peanuts (optional)

Steps:

  • Stir everything together and serve with apple wedges. Store in refrigerator.

Tips:

  • For the perfect crepe batter, ensure all ingredients are at room temperature. This allows them to blend smoothly, resulting in a lump-free batter.
  • Use a non-stick skillet or crepe pan for hassle-free flipping. A well-seasoned pan will also prevent the crepes from sticking.
  • Pour the batter in a thin, even layer onto the hot pan. Swirl the pan to distribute the batter evenly, creating a thin circle.
  • Cook the crepes over medium heat. If the heat is too high, the crepes will brown too quickly and may burn. Low heat will result in undercooked crepes.
  • Flip the crepes when the edges start to curl up and the bottom is golden brown. Use a spatula to gently loosen the edges and flip the crepe in one swift motion.
  • Fill the crepes with your desired fillings while they are still warm and pliable. This will make them easier to fold or roll.
  • Serve the crepes immediately or keep them warm in a preheated oven until ready to serve.
