I am completely anti-raisin, but he loves them so that's all that matters. Next time I will make half a batch for me and leave out the raisins, b/c they smell heavenly.

  • If you don't have any buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk and letting it sit for 5 minutes.
  • Be sure to mix the wet and dry ingredients separately before combining them. This will help to ensure that the muffins are light and fluffy.
  • Do not overmix the batter. Overmixing can make the muffins tough.
  • Fill the muffin cups only about 2/3 full. This will help to prevent them from overflowing.
  • Bake the muffins until a toothpick inserted into the center comes out clean. This will usually take about 20-25 minutes.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
