Steps:
- Bring a pot of well-salted water to a boil. Set up a bowl of well-salted ice water. Blanch the carrots in the boiling water. When they are cooked but still have some crunch, plunge them immediately into the ice water. When cool, use a clean tea towel to rub the skin off the carrots. Reserve.
- To a large skillet add the butter, sugar, lemon juice, garlic, thyme, cayenne and about 1/2 cup of water. Bring the pan to medium heat swirling occasionally. When most of the water has reduced and the mixture seems homogenous, removed the garlic and add the carrots and stir until they are coated. Cook for another 2 to 3 minutes or until the carrots are completely coated and hot.
- So good for my eyes!

Tips:
- Choose the right carrots: Look for baby carrots that are small and tender, with no blemishes or bruises.
- Peel the carrots if desired: Peeling is optional, but it will give your carrots a smoother texture.
- Make sure the glaze is thick enough: The glaze should be thick enough to coat the carrots evenly. If it's too thin, add more honey or cornstarch.
- Don't overcrowd the pan: When cooking the carrots, don't overcrowd the pan. This will prevent them from cooking evenly.
- Cook the carrots until they are tender: Cook the carrots until they are tender but still have a little bit of bite to them. This will ensure that they don't become mushy.
- Serve the carrots immediately: Serve the carrots immediately after cooking, while they are still warm and glazed.
Conclusion:
Apple and honey glazed baby carrots are a delicious and easy-to-make side dish. They are perfect for any occasion, from a casual weeknight dinner to a special holiday meal.
