CHOPPED SALAD WITH APPLES, WALNUTS AND BITTER LETTUCES

Chopped Salad With Apples, Walnuts and Bitter Lettuces image

The best place for a salad on the Thanksgiving menu is at the beginning of the meal, before everybody fills up. We often pass around plates of this vegetarian chopped salad (no bacon) to accompany the drinks before we sit down at the table. The salad is a great mix of bitter and sweet flavors, juicy and crunchy, and comforting, too. Sweet/tart, crisp juicy apples like Braeburns, Jonagolds, Honey Crisp and Granny Smith work well here.

Yield Makes 4 servings

Vinaigrette:
2 tablespoons cider vinegar
1 tablespoon honey
1 tablespoon finely chopped shallot
1 1/2 teaspoons Dijon mustard
1/3 cup vegetable oil
Kosher salt and freshly ground black pepper
Salad:
2 heads of butter lettuce leaves, gently torn
1 1/2 cups store-bought glazed walnuts
1 Honeycrisp or Fuji apple, quartered, cored, thinly sliced
Kosher salt and freshly ground black pepper
1 cup pomegranate seeds
1/4 cup tarragon leaves
1/2 cup crumbled Stilton or Maytag blue cheese (about 2 ounces)

Steps:

  • For vinaigrette:
  • Whisk first 4 ingredients in a medium bowl. Gradually whisk in oil. Season vinaigrette to taste with salt and pepper.
  • For salad:
  • Place lettuce in a large bowl. Add vinaigrette, walnuts, and apple; toss to coat. Season with salt and pepper. Garnish with pomegranate seeds, tarragon, and cheese.

Tips:

  • Choose the right lettuce: For this salad, it's best to use a combination of bitter lettuces, such as radicchio, escarole, and frisée, along with some milder lettuces, such as butterhead or romaine. This will give the salad a nice balance of flavors and textures.
  • Wash the lettuce thoroughly: Bitter lettuces can be quite dirty, so it's important to wash them thoroughly before using them. You can do this by soaking them in a bowl of cold water for a few minutes, then rinsing them well under running water.
  • Use a sharp knife to slice the apples: This will help to prevent the apples from browning. You can also toss the apple slices in a little lemon juice to help keep them from browning.
  • Don't overdress the salad: A little bit of dressing goes a long way with this salad. If you add too much dressing, it will overwhelm the flavors of the lettuce and apples.
  • Serve the salad immediately: This salad is best served immediately after it's made. The longer it sits, the more the flavors will meld together and the lettuce will start to wilt.

Conclusion:

This apple and bitter lettuces salad is a refreshing and flavorful dish that's perfect for a light lunch or dinner. It's also a great way to get your daily dose of fruits and vegetables. The combination of bitter lettuces, apples, and walnuts is a classic combination that's sure to please everyone at the table.
