1/4 cup minced fresh cilantro
2 to 3 tablespoons minced banana peppers
1 garlic clove, minced
1/2 pound thinly sliced cooked roast beef
HAM AND TURKEY ROLL-UPS:
12 ounces cream cheese, softened
1/2 cup shredded carrot
1/2 cup shredded zucchini
4 teaspoons dill weed
1/2 pound thinly sliced fully cooked ham
1/2 pound thinly sliced cooked turkey

Steps:

  • In a small bowl, combine the cream cheese, cilantro, peppers and garlic. Spread about 2 tablespoons on each slice of beef. 12 slices white bread, crusts removed

1/4 cup butter, melted

1 frozen pie crust
1 tablespoon sesame seeds
3 slices prosciutto
1 tablespoon Smart Balance butter spread (melted)

Steps:

  • Bring a pot of water to boil and blanch the asparagus. Drop into an ice bath to stop cooking.
  • Roll out pie crust to 1/8 inch thickness.
  • Slice the prosciutto into long thin strips.
  • Starting at the top of the spear, wrap a strip of prosciutto around the asparagus, spiraling it down to the base. Do the same with the pie crust strips, overlaying the prosciutto.

2 cups chopped cooked chicken
3 medium green onions, chopped finely (3 tablespoons)
1/4 cup chopped walnuts (finely chopped)
1/2 cup creamy poppy seed dressing (best quality)
1/2 cup cream cheese spread (from 8oz container)
2 flour tortillas (9 or 10 inch size)
6 leaves bibb lettuce
1/2 cup strawberry (finely chopped)

Steps:

  • Mix chicken, walnuts, and onions in a food processor bowl. Cover and process by using quick on and off motions until finely chopped.
  • Add 1/3 cup of the poppy seed dressing; process only until mixed. Mix remaining dressing and the cream cheese spread in a small bowl with a spoon until smooth.

12 medium flour tortillas
8 oz chive and onion cream cheese
8 oz plain cream cheese
8 oz pineapple cream cheese
8 oz blueberry flavored cream cheese
1/4 lb sliced ham
1/4 lb sliced turkey
1 c shreded cheddar cheese

Steps:

  • 1. Let cream cheese come to room temperature
  • 2. Take one tortilla at a time, lay flat and spread with cream cheese. You can mix flavors and fillings.
  • 3. Spread tortilla with pineapple cream cheese and lay ham slices on top. Roll the tortilla and seal the flap with cream cheese.
  • 4. Spread tortilla with chive and onion cream cheese and lay turkey slices on top. Roll the tortilla and seal the flap with cream cheese.
