Italian Seafood Salad, love seafood? Then this is the perfect seafood appetizer recipe for you! Fast, easy and so delicious.

1 1/4 cups cleaned and cut calamari ((250 grams))
1 1/2 cups mussels (without the shell I used frozen mussels) ((250 grams))
1 3/4 cups small shrimp cleaned (I used frozen shrimp) (200 grams)
1 stalk celery chopped
1 carrot grated
5-6 black olives chopped
1/4 cup Italian parsley chopped (8 grams)
1/4 cup olive oil (56 grams)
juice from 1/2-1 lemon
1-2 pinches salt (taste before serving add if needed)

Steps:

  • In a large pot of boiling water, boil for approximately 40-50 minutes the sliced calamari until tender, remove to a separate medium-sized bowl with a slotted spoon.
  • Keeping the pot of boiling water add mussels and cook 10 minutes, remove to the same bowl with the calamari and add the shrimp to the boiling water and boil or 10 minutes, remove to the same bowl.
  • Drain the fish in the medium-sized bowl a second time just to remove excess liquid and let cool. Add the chopped celery, grated carrot, chopped olives, chopped parsley , olive oil and lemon juice. Gently mix to combine well.
  • Refrigerate for at least 2-3 hours to combine flavours.
  • Before serving add a little more olive oil (3-4 tablespoons) and salt if necessary, you could also add some extra chopped fresh parsley. Some people like a drizzle of Balsamic vinegar or extra lemon juice. Serve with crusty Italian bread. Enjoy!

1/2 pound (225g) dry-packed bay or sea scallops, cut into 1/2-inch pieces
2 teaspoons grated zest and 1 cup (240ml) juice from 8 to 10 lemons, divided
1 pound (450g) large shrimp, peeled and deveined
1/2 teaspoon kosher salt, plus more to taste
1/4 teaspoon baking soda
4 medium cloves garlic, 2 crushed and 2 minced, divided
1/2 cup plus 1 tablespoon (135ml) extra-virgin olive oil, divided
2 pounds (1kg) mussels, de-bearded and scrubbed (see note)
5 whole peppercorns
2 bay leaves
1 pound (450g) cleaned squid bodies and tentacles, bodies cut into 1/2-inch rings and large tentacles halved lengthwise
1/4 cup packed minced flat-leaf parsley leaves and tender stems (3/4 ounce; 20g)
Dash cayenne pepper
Dash ground coriander seed (optional)
Freshly ground black pepper
2 stalks celery, sliced thinly on the bias (6 ounces; 170g)
1/2 cored and peeled fennel bulb, cut lengthwise into quarters, then sliced thinly on the bias (4 ounces; 115g)

Steps:

  • Meanwhile, in a medium bowl, toss shrimp with salt and baking soda and refrigerate for 30 minutes.
  • Pick all but 10 mussels from their shells, discarding shells. Cut shrimp in half lengthwise down the middle. In a medium bowl, combine parsley, remaining 1/2 cup (120ml) lemon juice, lemon zest, remaining 1/2 cup (120ml) olive oil, remaining 2 minced cloves garlic, cayenne pepper, and coriander seed (if using). Whisk well.

6 -8 ounces frozen crab, thawed (chilled cooked shrimp would also be fine)
1/2 cup sliced fresh mushrooms
1 small cucumber, thinly sliced
1 (6 ounce) jar marinated artichoke hearts
2 tablespoons lemon juice
1 tablespoon white wine vinegar
1 clove garlic, crushed
1/2 teaspoon oregano
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1 tomatoes, sliced into wedges
1/4 lb swiss cheese, sliced and cut into bite sized pieces

Steps:

  • Thaw, drain and slice crab.
  • Combine sliced mushrooms and cucumbers.
  • Drain artichokes, reserve liquid.
  • Combine the artichoke liquid with lemon juice, vinegar, garlic and spices.
  • Pour over mushrooms and cucumbers.
  • Marinate for two hours in the refrigerator.
  • Drain the vegetables.
