This recipe was given to me by a friend at church many years ago. Every time I take it to a potluck people rave about it and want the recipe! I usually make 2 batches at a time. Anginetti, which are made by Stella Doro, are sometimes hard to find...but they really make the recipe stand out and are necessary for the best results....

Steps:
- Prepare cookies by slicing off the tops. Drain pineapple, leaving a little juice. Beat Cool Whip and cream cheese for one minute. Add crushed pineapple and blend for one minute. Put filling on bottom layer of cookies and replace tops.
Tips:
- When making the choux pastry, ensure the mixture is stirred continuously until it forms a smooth ball and leaves the sides of the pan clean.
- Pipe the choux pastry onto a lined baking sheet, ensuring there is enough space between each puff to allow for expansion during baking.
- Bake the choux puffs until they are golden brown and crispy, then transfer them to a wire rack to cool completely before filling.
- For the pastry cream filling, use full-fat milk or cream for a richer flavor. Whisk the eggs and sugar together until thick and pale, then slowly whisk in the hot milk mixture.
- Strain the pastry cream through a fine-mesh sieve to remove any lumps before using it to fill the choux puffs.
- When filling the choux puffs, use a piping bag fitted with a small round tip to ensure a neat and even filling.
Conclusion:
Anginetti cream puffs are a delicious and elegant dessert that can be enjoyed by people of all ages. With their light and airy choux pastry and creamy filling, they are sure to be a hit at any gathering. Whether you are a seasoned baker or a beginner, give this recipe a try and impress your friends and family with your culinary skills.
