1/2 cup finely chopped scallions (white and green parts)
1/4 cup grated carrots
1/4 cup finely chopped onion
1 teaspoon dried thyme
1 teaspoon ground cumin
1/2 teaspoon sweet paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup ketchup
2 teaspoons gelatin
2 pounds ground beef chuck
1/2 pound ground pork
2 large eggs, beaten
1/2 cup dried bread crumbs
Kosher salt and freshly ground black pepper
1/2 cup ketchup
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard

Steps:

  • To make the meatloaf: Preheat the oven to 375 degrees F. In a small skillet, heat the oil over medium heat. Add the scallions, carrot and onion and cook until softened, about 10 minutes. Add the thyme, cumin, paprika, and garlic and onion powders. Cook until fragrant, about 1 minute. Scrape into a large bowl and let cool completely.
  • Meanwhile, heat the ketchup in the microwave until just warm to the touch. Sprinkle the gelatin over the ketchup and whisk to remove clumps. 3 tablespoons unsalted butter
1 pinch baking soda
1/2 onion, chopped fine
1 dash salt and pepper
1 garlic clove, minced
1 teaspoon fresh thyme
2 tablespoons Worcestershire sauce
3 tablespoons quick oats
2 teaspoons cornstarch
2 large egg yolks
2 tablespoons Dijon mustard
2 lbs lean ground turkey (85 or 93%)
1 ounce parmesan cheese, grated (1/2 cup)
1/3 cup fresh parsley
1 cup ketchup
1/4 cup brown sugar
2 1/2 teaspoons cider vinegar
1/2 teaspoon hot sauce

Steps:

  • 1. FOR THE MEATLOAF: Adjust oven rack to upper-middle position and heat oven to 350 degrees. Line wire rack with aluminum foil and set in rimmed baking sheet. Melt butter in 10-inch skillet over low heat. Stir baking soda into melted butter. Add onion and 1/4 teaspoon salt, increase heat to medium, and cook, stirring frequently, until onion is softened and beginning to brown, 3 to 4 minutes. Add garlic and thyme and cook until fragrant, about 1 minute. Stir in Worcestershire and continue to cook until slightly reduced, about 1 minute longer. Transfer onion mixture to large bowl and set aside. Combine oats, cornstarch, 3/4 teaspoon salt, and 1/2 teaspoon pepper in second bowl.
  • 2. FOR THE GLAZE: Whisk all ingredients in saucepan until sugar dissolves. Bring mixture to simmer over medium heat and cook until slightly thickened, about 5 minutes; set aside.
  • 3. Stir egg yolks and mustard into cooled onion mixture until well combined. Add turkey, Parmesan, parsley, and oat mixture; using your hands, mix until well combined. Transfer turkey mixture to center of prepared rack. Using your wet hands, shape into 9 by 5-inch loaf. Using pastry brush, spread half of glaze evenly over top and sides of meatloaf. Bake meatloaf for 40 minutes.
  • 4. Brush remaining glaze onto top and sides of meatloaf and continue to bake until meatloaf registers 160 degrees, 35 to 40 minutes longer. Let meatloaf cool for 20 minutes before slicing and serving.

1/4 cup Egg Beaters egg substitute or 1 egg
1/2 cup wheat bran or 1/2 cup oat bran
3/4 cup oatmeal
1/2 cup ground flax seeds
1 small onion, minced
1 cup shredded cheddar cheese (optional)
1/2 cup ketchup
1/2 cup horseradish sauce
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon dried parsley
1 teaspoon dried thyme
1/2 cup brown sugar
1/4 cup Dijon mustard

Steps:

5 slices thick cut bacon
3 celery ribs, chopped
1 large onion, minced
1 tablespoon Worcestershire sauce
5 large button mushrooms, minced

1 1/2 cups shredded cheese (whichever kind is your favorite)
1 egg
3/4 cup breadcrumbs

Steps:

  • Chop bacon into small pieces and fry until crispy. Remove from pan to drain and reserve 1 tablespoon bacon fat in pan.

2 lbs extra lean ground beef
1 3/4 cups Ritz crackers, crushed
1 small onion, chopped finely
2 eggs, slightly beaten
3/4 cup ketchup
2 teaspoons garlic salt
1/4-1/2 teaspoon pepper (to taste)
2 slices of regular-sliced bacon
1/2 cup ketchup
1/4 teaspoon salt
1/2 teaspoon dry mustard
2 tablespoons dark brown sugar
1/8-1/4 teaspoon pepper (to taste)

Steps:

  • Mix first 7 ingredients throughly together and pack into a loaf pan.
  • Next put the strips of bacon on top and bake for an hour at 350F degrees.
  • While waiting, mix the sauce ingredients together.
