AMY'S KICKASS CHICKEN MARINADE

Amy's Kickass Chicken Marinade image

I added a bit to Bergy's wonderful Ginger-Lime Marinade and came up with this; a staple in our house now. The ingredient variations are used depending on how much chicken I have; usually I use this marinade with boneless chicken breasts. I would recommend grilling with mesquite (real mesquite not briquettes). El Diablo or Best of the West are great if they are available where you are.

Time 1h10m

Yield 2

Number Of Ingredients 5

2 skin-on, boneless chicken breasts
4 ounces horseradish-chive compound butter
1 yellow onion, cut into 5 whole slices
2 cups chicken stock
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Using 2 fingers, loosen the skin on each chicken breast. Thinly slice compound butter and stuff under skin to cover as much of the chicken as possible.
  • Layer onion slices on the bottom of a glass baking dish. Pour in chicken stock. Place chicken breasts on top of the onions, skin-side up. Season with salt and pepper.
  • Bake in the preheated oven for 30 minutes. Start basting chicken with its juices and rotate if skin is not crisping evenly. Continue baking until chicken is no longer pink in the center and the juices run clear, about 25 more minutes, depending on the size of the chicken breasts. Baste chicken every 5 to 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

AMY'S GRILLED CHICKEN BREASTS

Amy's Grilled Chicken Breasts image

This recipe is delicious. I have not barbecued these but I have baked these in the oven. The flavors in this recipe are just wonderful and this is also a nice healthy and low fat recipe. The recipe is exported from Mastercook. This is a recipe that you definitely want to be sure and not overcook so the chicken stays moist and juicy. Preparation does not include marinating times.

Tips:

  • Choose the right chicken: Boneless, skinless chicken breasts or thighs work best for this marinade. If you use bone-in chicken, increase the marinating time to at least 24 hours.
  • Make sure the chicken is fully thawed: If the chicken is frozen, thaw it completely before marinating. This will allow the marinade to penetrate the chicken evenly.
  • Use a large enough container: The chicken should be completely submerged in the marinade. If you don't have a large enough container, you can divide the chicken and marinade it in batches.
  • Marinate the chicken for at least 4 hours: The longer you marinate the chicken, the more flavor it will absorb. However, you can marinate the chicken for up to 24 hours.
  • Discard the marinade: Do not reuse the marinade after it has been used to marinate chicken. This is because the marinade may contain harmful bacteria.
  • Cook the chicken thoroughly: Cook the chicken to an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius) before eating.

Conclusion:

Amy's Kickass Chicken Marinade is a flavorful and versatile marinade that can be used on chicken breasts, thighs, or wings. It is perfect for grilling, baking, or roasting chicken. The marinade is made with a combination of olive oil, soy sauce, honey, brown sugar, garlic, ginger, and spices. This marinade is sure to add a delicious flavor to your chicken.
