1 recipe pastry for a 9-inch pie crust
2 pounds heirloom tomatoes
1 pound Roma tomatoes
1 cup diced raw bacon
½ cup sliced leek
2 cups grated white Cheddar cheese
½ cup grated Fontina cheese
½ cup mayonnaise
½ cup fresh basil, torn into small pieces
1 egg
1 tablespoon Dijon mustard
1 pinch salt and ground black pepper to taste

Steps:

  • Chill pie dough for about 1 hour.
  • Preheat the oven to 425 degrees F (220 degrees C). Place a baking sheet on the lower oven rack.
  • Slice heirloom tomatoes into 1/2-inch rounds. Remove seeds with your fingers. Place 6 slices on paper towels or a clean cloth and cover with more paper towels or another clean cloth. Arrange the remaining slices on a wire rack. Cut Roma tomatoes into 1/2-inch slices, remove seeds, and arrange them on the rack as well.
  • Line a deep-dish, 9-inch pie plate with dough. Place 2 layers of aluminum foil over the entire surface. Fill with pie weights or dried beans.
  • Bake pie crust on the preheated baking sheet on the bottom rack. Place tomatoes on a higher rack. Reduce temperature to 400 degrees F (200 degrees C). Bake until the bottom of the pie crust has lost its translucent raw look and the edges have just started to color, 12 to 15 minutes.
  • Carefully remove the foil and the weights. Cover the edges of the crust with foil to prevent them from burning. Poke the bottom of the pie crust with a fork to keep it from puffing up. Return the pie crust to the bottom rack and bake until the bottom starts to color, about 8 more minutes.
  • Remove pie crust and allow to cool. Continue baking the tomatoes until they are wilted, about 40 minutes total. Remove and allow to cool. Keep the oven on.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until some of the fat has rendered, about 5 minutes. Add sliced leek. Cook until bacon is crisp and the leeks have softened and browned, about 5 more minutes. Drain bacon on paper towels and allow to cool.
  • Place bacon-leek mixture, Cheddar, Fontina, mayonnaise, basil, egg, and mustard in a bowl. Season with salt and pepper. Mix to combine.
  • Spread 1/3 mixture on the bottom of the pie crust. Arrange 1/2 of the roasted tomatoes on top, overlapping heirlooms with Roma tomatoes. Spread another 1/3 of the mixture over the tomatoes and arrange the remaining roasted tomatoes on top. Add the last 1/3 of the mixture and gently press the fresh tomato slices on top in a decorative pattern. Arrange foil around the edges of the pie crust to protect them from burning, taking care that the foil doesn't touch the tomatoes.
  • Bake until browned and bubbly on top, about 40 minutes. Cool completely before serving.

1 cup white sugar
3 tablespoons all-purpose flour
1 teaspoon fresh lemon juice
1 pinch salt
3 egg yolks
3 egg whites
1 (12 fluid ounce) can evaporated milk
1 ½ cups milk
2 (9 inch) pie shell

Steps:

  • Place cottage cheese in strainer and let drain for about 1 hour or until most of liquid has been drained.
  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, combine cottage cheese, sugar, flour, lemon juice, salt, egg yolks, evaporated milk, and regular milk. Mix well.
  • In a separate clean bowl, beat egg whites until firm. Fold into batter until smooth. Pour into pie crusts.
  • Bake for 15 minutes at 425 degrees F (220 degrees C), then reduce oven to 350 degrees F (175 degrees C) and bake for an additional 25 minutes or until knife inserted in center comes out clean.

3 tablespoons milk
2 cups all-purpose flour
2 teaspoons white sugar

2 cups frozen cranberries, sorted and rinsed
2 cups chopped apples
⅔ cup white sugar
3 ½ teaspoons all-purpose flour
1 tablespoon lemon juice

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine oil and milk in a liquid measuring cup; stir to combine.
  • Combine flour, sugar, and salt in a medium bowl; mix together with a fork. Add oil mixture and mix until well combined. Press a little more than 1/2 of the crust mixture into the bottom and sides of a pie plate, using a spatula if necessary, as mixture will crumble easily.

1 egg white

3 large egg yolks
4 tablespoons all-purpose flour
1 cup brown sugar, packed
1/8 teaspoon salt

1/4 cup cider vinegar
2 cups warm water
1/4 cup butter, softened
1 (9 inch) baked pie crusts
3 large egg whites
1/4 teaspoon salt
1 teaspoon cider vinegar
6 tablespoons granulated sugar
1 1/2 teaspoons cornstarch

Steps:

  • In the top of a double boiler, beat the egg yolks, well.
  • Combine the flour, sugar, salt and spices and blend into the egg yolks.
  • Add the vinegar and mix and then add the warm water.
  • Simmer over boiling water for 25 minutes or until the mixture is thickened -- the water should just reach the bottom of the top pan.
  • Stir in the butter and cool slightly, about 15-20 minutes, without stirring.
  • Pour the warm filling into the baked shell.set aside to cool.
  • Preheat the oven to 325°F.
  • In a large mixing bowl, beat together the egg whites, salt and vinegar until soft peaks form.
  • Gradually add the sugar, 1 tbsp at a time, continue beating until stiff peaks form.
  • Sprinkle in the cornstarch just before the beating is completed. The peaks should not topple over when the beater is raised.
  • Spread the meringue over the filling all the way to the edge of the pastry.
  • Bake for 5-8 minutes, or until the meringue is golden brown.
  • Cool the pie completely and then refrigerate.

1/4 teaspoon salt
2 1/2 cups half-and-half or 2 1/2 cups light cream

  • In a medium saucepan, stir together the sugar, cornstarch and salt.

100 Year Old Pie Crust
2 1/2 cups flour
1 c shortening/lard
1 tablespoon vinegar
1/2 c milk
1 dash salt

  • Amish Sugar Cream Pie In sauce pan combine, white sugar, salt, half-and-half and whipping cream. Bring to a boil. In another sauce pan, combine Br.sugar & cornstarch. Gradually whisk in hot mixture into br.sugar mixture. Add margarine/or butter (to me this makes it even better.). Cook over med. heat, whisk constantly, 5 min or until thick. Simmer 1 minute and stir in van. Pour into uncooked pie shell and sprinkle w/cinnamon and nutmeg. Bake at 375°F for 25 minutes. 100 Year Old Pie Crust Mix first 3 ingredients plus salt until crumbly. Add milk until mixed into dough. Shape into a ball and chill for 2 hours. Roll out on a floured pastry board.

1 cup whole cream (i.e., heavy cream or whipping cream)
2 cups half & half
3 large egg whites
1/2 cup granulated sugar
1 cup brown sugar
1 round Tbsp all-purpose flour
1 dash salt (important - don't omit)
1/2 tsp vanilla extract
1 (9-inch) pie shell, unbaked
a few tsp white sugar, cinnamon or nutmeg (optional)

Steps:

  • 1. Preheat oven to 375°F.
  • 2. In a medium size saucepan, heat the cream and half & half together until lightly scalded (it should coat the back of a spoon but should NOT reach a boil). Remove from heat, and set aside.
  • 3. In a mixing bowl, beat egg whites until frothy. Add the white sugar, and beat until well blended. Add the brown sugar, flour, salt and vanilla, and beat well.
  • 4. Gradually whisk the warmed cream mixture to the egg white mixture, and mix well.
  • 5. Pour the creamy pie batter into the unbaked pie shell. (If you like, you can sprinkle a light dusting of sugar, cinnamon or nutmeg on the surface - it's purely optional.) Place pie pan in bottom rack of oven, and bake about 20 to 30 minutes or until set.

2 cups granulated sugar
2 cups milk
1/2 teaspoon crushed clove
3 large eggs
3 heaping tablespoons flour
1 tablespoon butter or 1 tablespoon margarine
1 teaspoon cinnamon

Steps:

  • on the three large eggs, you will need to seperate and beat yolks and whites in seperate bowls.
  • Mix together sugar, flour, cloves and cinnamon.
  • Add butter, beaten egg yolks and milk.
  • In a seperate mixing bowl, beat 3 egg whites till peaks form.
  • Fold this into first mixture.
  • Pour into 2 unbaked pie shells and bake at 350* till set.

1 unbaked 8-inch pie shell
1 cup brown sugar
3 tablespoons all-purpose flour
1 pinch salt
1 (12 ounce) can evaporated milk
2 1/2 tablespoons butter
ground cinnamon

Steps:

  • Preheat oven to 350 degrees.
  • In the pie shell, place the brown sugar, flour and salt.
  • Mix with your fingers.
  • Pour the evaporated milk over the flour and sugar, but do not stir or mix this in.
  • Dot with butter, and sprinkle with cinnamon, liberally, over all.
  • Bake for 50 minutes, or until the filling just bubbles up in the middle.
  • The filling will never completely set, but that's the way it's supposed to be.
