AMISH NEVER FAIL PIE CRUST
I've had this recipe for a long time. It's the only crust my wife asks for whether I'm making pot pies, fruit pies or turnovers. It makes awesome homemade Hot Pockets too. You can substitute whole wheat flour for all or some of the AP flour. This is enough for a 9 inch 2 crust pie, two 9 inch single crust pies or 10-12 hot pockets. You can double the recipe if you have a really big mixing bowl for OAMC.

PEACH PIE
I acquired this delicious peach pie filling recipe some 40 years ago, when my husband and I first moved to southern Iowa and had peach trees growing in our backyard. It's been a family favorite since then and always brings back memories of both summer and those happy early years. - June Mueller, Sioux City, Iowa

Steps:
- Preheat the oven to 450 degrees F (220 degrees C).
- Line the bottom and sides of a 9 inch pie plate with one of the pie crusts. Brush with some of the beaten egg to keep the dough from becoming soggy later.
- Place the sliced peaches in a large bowl, and sprinkle with lemon juice. Mix gently. In a separate bowl, mix together the flour, sugar, cinnamon, nutmeg and salt. Pour over the peaches, and mix gently. Pour into the pie crust, and dot with butter. Cover with the other pie crust, and fold the edges under. Flute the edges to seal or press the edges with the tines of a fork dipped in egg. Brush the remaining egg over the top crust. Cut several slits in the top crust to vent steam.
- Bake for 10 minutes in the preheated oven, then reduce the heat to 350 degrees F (175 degrees C) and bake for an additional 30 to 35 minutes, until the crust is brown and the juice begins to bubble through the vents. If the edges brown to fast, cover them with strips of aluminum foil about halfway through baking. Cool before serving. This tastes better warm than hot.

AMISH PEACH DUMPLINGS
Flour dumplings are added to a peach syrupy mixture to create a wonderful dessert. This is an Amish recipe. Using cream or canned milk instead of the milk gives this a creamier texture but also more calories. You can use fresh, frozen, or canned peaches.

Tips:
- For the best results, use fresh, ripe peaches. If you can't find fresh peaches, you can use frozen peaches, but be sure to thaw them completely before using.
- To make the pie crust, you can use a store-bought pie crust mix or make your own from scratch. If you're making your own pie crust, be sure to chill the dough for at least 30 minutes before rolling it out.
- When rolling out the pie crust, use a light touch and avoid overworking the dough. The more you work the dough, the tougher the pie crust will be.
- To prevent the pie crust from shrinking, trim the edges of the dough about 1/2 inch beyond the edge of the pie plate. Then, fold the edges of the dough under and crimp them to seal.
- Before adding the filling to the pie crust, sprinkle the bottom of the crust with a little bit of flour. This will help to prevent the filling from sticking to the crust.
- When adding the filling to the pie crust, be sure to leave about 1 inch of space around the edges. This will allow the filling to expand as it bakes.
- To prevent the pie from overflowing, place a baking sheet under the pie plate before baking.
- Bake the pie at a high temperature for the first 15 minutes, then reduce the temperature and continue baking until the crust is golden brown and the filling is bubbling.
- Let the pie cool for at least 30 minutes before serving. This will allow the filling to set and the flavors to develop.
Conclusion:
Amish peach pie is a delicious and easy-to-make dessert that is perfect for any occasion. With its flaky crust and sweet, juicy filling, this pie is sure to be a hit with everyone who tries it. So next time you're looking for a special treat, give Amish peach pie a try.
