A family favorite that puts a new twist on the traditional Pecan Pie. It has great taste and flavor and the hardest part about this pie is remembering that it is in the oven. LOL!!!

Time 1h15m

Number Of Ingredients 11

3 eggs
3/4 c light corn syrup
1/2 c sugar
3 Tbsp brown sugar
3 Tbsp orange juice
2 Tbsp butter, melted
1 tsp grated orange peel
1/8 tsp salt
1 1/2 c chopped pecans
2/3 c flaked coconut
1 unbaked pastry shell

Steps:

  • 1. In a large bowl, beat eggs, corn syrup, sugars, orange juice, butter, orange peel and salt until well blended.
  • 2. Stir in pecans and coconut.
  • 3. Pour into pastry shell. Bake at 350 degree for 50-60 minutes or until a knife test thru the center of the pie comes out clean. You should also use a pie cover and if you don't have one, I have always used foil around the outside of the pie so the edges do not burn. :)

Tips:

  • For the perfect pie crust, use a combination of butter and shortening. This will create a flaky and tender crust.
  • Be sure to chill the dough before rolling it out. This will help prevent the dough from shrinking in the oven.
  • When lining the pie plate with the dough, trim the edges so that there is about 1 inch of overhang. This will allow you to fold the edges under and crimp them to seal the pie.
  • Before filling the pie, pre-bake the crust for about 10 minutes. This will help to prevent the crust from becoming soggy.
  • When making the filling, be sure to use fresh, ripe fruit. This will give your pie the best flavor.
  • If you are using a store-bought pie crust, be sure to pre-bake it according to the package directions.
  • Serve the pie warm or at room temperature with a scoop of vanilla ice cream or whipped cream.

Conclusion:

Ambrosia pecan pie is a delicious and easy-to-make dessert that is perfect for any occasion. With its sweet and creamy filling and flaky crust, this pie is sure to be a hit with everyone who tries it. So next time you are looking for a special dessert, give this ambrosia pecan pie a try.
