AMAZING COCONUT OIL PIE CRUST
I created this recipe for my niece, who is allergic to soy, and discovered that coconut oil makes the most amazingly moist and flaky crust I've ever tasted. If you have trouble finding coconut oil, try the health or organic food section of your store, or a health food supplier.

Steps:
- 1. Combine milk, sugar, biscuit mix, eggs, butter, and vanilla in blender. ( I sometimes substitute the vanilla for coconut flavoring )
- 2. Cover and blend on low for 3 minutes.
- 3. Pour into Greased 9 inch pie pan
- 4. Let Stand 5 minutes
- 5. Sprinkle with coconut
- 6. bake at 350 degrees for 40 minutes
Tips:
- Use Fresh Coconut: Fresh coconut has a more intense flavor and aroma compared to store-bought shredded coconut. If you have access to fresh coconut, grate it yourself for the best results.
- Toast the Coconut: Toasting the coconut before adding it to the pie filling enhances its flavor and gives it a golden brown color. You can toast the coconut in a skillet over medium heat, stirring constantly, until it is fragrant and slightly browned.
- Use Full-Fat Coconut Milk: Full-fat coconut milk is creamier and richer than low-fat or skim coconut milk. It will give your pie a more luxurious texture and flavor.
- Don't Overmix the Crust: Overmixing the crust will make it tough. Mix the ingredients until they just come together, then press it into the pie pan.
- Chill the Pie Before Serving: Chilling the pie before serving allows the flavors to meld and the crust to set. This will result in a more delicious and enjoyable pie.
Conclusion:
This classic coconut pie is a delightful dessert that is perfect for any occasion. With its creamy coconut filling, flaky crust, and toasted coconut topping, it is sure to be a hit with everyone who tries it. Whether you are a seasoned baker or a beginner, this recipe is easy to follow and will yield delicious results. So, gather your ingredients, preheat your oven, and get ready to enjoy this amazing coconut pie!
